Ingredients For Making A Healthy Corn Salad
- 4 cups corn, cut from the cob
- 1 tbsp olive oil
- red bell pepper chopped – 1/2
- 1/2 small red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 6 green onions, chopped
- 1 jalapeno pepper, diced
- 1/2 avocado chopped
- 4 tbsp lime juice
- 1/2 tsp cumin ground
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper ground
- 1/4 tsp salt
- 2 tbsp sour cream
- 2 tbsp mayonnaise
- 1/2 cup cotija cheese, crumbled
Preparation
- Firstly, get the corn off the cob.
- Take olive oil in a large pan on put it on high flame.
- Next, add the corn and stir it properly.
- Then, cook them for about 3 to 5 minutes or until the corn starts to char.
- Take a large bowl and put the corn in it. Allow it to cool down for sometime.
- In the same bowl, add the all remaining ingredients.
- Stir everything together very well and make sure they combine properly.
- Add lime juice,pepper and salt according to your taste.
