Paneer tikka masala is an Indian dish made from veggies, paneer chunks marinated in spices and grilled in tandoor. The flavours of this dish burst instantly at the very first bite and it tastes heavenly. It is widely available in India and some other countries also. It is also known as grilled paneer.

 Ingredients

Kasuri mathi

For marination

  • 350gms paneer, cut in cubes
  • ½ cup yoghurt
  • 1tbsp ginger garlic paste
  •  1/2 cup green capsicum cubes
  • 1 tbsp mustard oil
  •  1/2 cup red bell pepper cubes
  • 1 tbsp roasted gram flour (besan)
  •  1/2 cup onions, cut in quarters
  • 1 tbsp panchranga achaar ( pickle) paste
  • ¼ tsp turmeric powder
  •  1 tsp Kasuri methi
  •  1 tbsp degi mirch
  • Salt to taste
  •  1 tsp ajwain (carom seeds)

For tikka

  • 1tbsp ghee
  • Charcoal
  • 2 tbsp butter
  • 1 tbsp mustard oil
  • Kasuri methi for garnish

Note

  • Take sour curd and if the curd is not sour then add lemon juice.

 

 Method

  1. Take two bowls and in a bowl, add curd, ginger garlic paste, kasuri methi, and mustard oil and mix well.
  2. Now add salt and carom seeds, mix well and add roasted gram flour and mix well.
  3. The base marination is ready. Now divide the prepared mixture into two parts.
  4. In one part add degi mirch, mix well and in the second part panchranga achaar paste and turmeric powder for achari paneer tikka and mix well.
  5. Add onions, capsicum and bell peppers, and paneer cubes in both the marinations and coat well with the help of your hands.
  6. Take skewers and arrange onion, capsicum, bell pepper, and paneer on it, set aside till in use.
  7. Heat mustard oil in a grill pan till the smoking point and add butter.
  8. Roast the marinated paneer tikka skewers on the grill pan.
  9. Grease the paneer tikka skewers with melted butter.
  10. Transfer the tikka skewers to the serving plate.
  11. Take a bowl and place hot coal in it and pour some ghee over it, place this bowl next to paneer tikka.
  12. Cover the tikkas for 2 minutes to smoke, garnish with Kasuri methi.
