There is no doubt that winter brings with itself the cravings for a hot and steamy bowl of soup. And tomato soup remains the all-time go-to soup for everyone. Tomatoes come with a wide range of health benefits; they are rich in vitamins, minerals, and antioxidants. Tomato soup is highly nutritious with low calorific values.
Here is a restaurant-style soup that could be enjoyed at home while lying in the blanket.

Ingredients
- 2 tablespoons of butter or olive oil
- 2 bay leaves/ tej patta
- salt
- ½ teaspoon or 2-3 small garlic
- ⅓ cup or 1 medium onion
- 500 grams or 6-7 medium tomatoes
- 1 teaspoon of raw sugar or white sugar
- crushed black pepper
- 1 to 2 tablespoons heavy cream
Preparation
- Start the preparation by melting the butter in a pot. Keep the flame medium-low so that it doesn’t burn.
- Add two bay leaves and fry them until they are burned; avoid burning them.
- Now add finely chopped garlic and onions to the pot and stir it well.
- Sauté for 3-4 minutes until the onion turns translucent.
- Next, add freshly chopped onions and a pinch of salt, according to taste, and mix it well.
- Cover the pot and simmer the heat to low until the tomatoes soften. Cook for about 8-10 minutes.
- Keep checking the mixture and if the liquid dries up, add water to it and stir.
- After tomatoes are softened, discard the curry leaves from them and keep the mixture aside to cool down.
- After cooling down of the mixture, pour it into the blender and blend it to get a smooth, consistent soup puree.
- Now take a strainer and strain the puree through it.
- Pour the puree back into the pot and add 1 cup of water, and heat it.
- Add one teaspoon of sugar to it and mix the soup well.
- Season the soup well with black pepper and turn off the stove.
- Depending on the required richness, add 1-2 tablespoons of cream.
Serve the hot soup with crunchy bread croutons and garnish it with freshly chopped basil/mint or coriander leaves.
