This is a traditional dish of tribal cuisine. It was originated in the Araku valley, in the Vishakhapatnam. It is prepared by marinating chicken in spices, and then it is stuffed inside the bamboo stick. These bamboo sticks then placed on the fire to cook chicken. Bamboo chicken is also calledĀ bangulo chicken. It is very famous in the Southern India region. You can also make this dish at home. It is very easy and takes less time.

Ingredients

  • 1 1/2 kg chicken
  • 2 tbsp Ginger garlic paste
  • 2 large onion, chopped
  • salt to taste
  • 1/2 tbsp black pepper powder
  • 4 nos green chillies, chopped
  • 2 tbsp red chilli powder
  • 3 tbsp coriander powder
  • 1 tbsp turmeric powder
  • 2 tbsp garam masala
  • 3 tbsp chicken masala
  • 4 tbsp oil

Method

  1. Firstly, in a large mixing bowl, add chicken, red chilli powder, black pepper powder, coriander powder, turmeric powder, garam masala, chicken masala, ginger garlic paste, chopped onions, green chillies, and oil.
  2. Mix everything well and stuff it inside a bamboo stick.
  3. Once the bamboo stick is filled with chicken, stuff the remaining mixture in another bamboo stick.
  4. Now, repeat this process until the marinated chicken is finished.
  5. Now, insert a banana leaf inside each stick.
  6. Then, cover its edge with banana leaf and tie.
  7. After that, set the chunks of coal and woods on fire and place the bamboos on them.
  8. Cook it for 30 minutes.
  9. Flip and turn the sticks in between.
  10. After 30 minutes, remove the bamboo sticks from the fire and keep them aside for 5-10 minutes.
  11. Remove the cooked chicken on a banana leaf and serve.
