Ingredients

  • 4 coles Australian Ocean Barramundi, skin on portions skin removed
  • 1/2 tsp ground ginger
  • 3 tsp paprika
  • 1/2 tsp chili powder
  • 1 tsp sea salt flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tbsp olive oil
  • 1/2 tsp ground turmeric

For Beetroot Coconut Relish

  • 1 lime, zested, juiced
  • 2 tsp light brown sugar
  • 1 tsp ginger, finely grated
  • 2 beetroot, peeled and coarsely grated
  • 1/4 cup shredded coconut
  • 1/2 cup Fresh coriander leaves and mint leaves, coarsely chopped

For Yoghurt Vinaigrette

  • 1/2 cup plain whole milk
  • 2 tbsp olive oil
  • 1 lime, juiced
  • 2 tsp light brown sugar

  1. Firstly, marinate the fish with paprika, chilli powder, ground coriander, cumin, ginger, sea salt flakes, and turmeric. Coat the fish from both sides.
  2. In a pan, add olive oil, marinated barramundi, and cook for 4 minutes on each side until browned and perfectly cooked.

For Beetroot Coconut Relish

  1. In a bowl, add lime zest, lemon juice, sugar, and ginger. Whisk until sugar dissolves.
  2. Now add grated beetroot, mint, coriander leaves, mint leaves, and salt. Toss well to combine.
  3. Keep aside for further use.

For Yoghurt Vinaigrette

  1. In a small bowl, add yoghurt, oil, sugar, lime juice, and 1 tbsp water. Whisk it nicely.
  2. Sprinkle some salt and keep aside for further use.

For Serving

  1. Add pour four spoons of vinaigrette yoghurt and place the cooked barramundi over it on a serving plate.
  2. Now top it with beetroot coconut relish.
