  • 6 slices of bacon, chopped & browned
  • 1 medium head Romania lettuce
  • 2 cooked chicken breast from a rotisserie chicken
  • 1 large avocado, sliced
  • 2 hard-boiled eggs
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup blue cheese ( or feta cheese), crumbled
  • 2 tbsp parsley, finely chopped

Balsamic vinaigrette dressing

  • 1 tbsp dijon mustard
  • 3 tbsp balsamic vinegar
  • 1 garlic clove, finely minced
  • 1/3 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Balsamic vinaigrette dressing

  1. Take a mason jar add some olive oil, balsamic vinegar, dijon mustard, garlic clove, peoper and salt 
  2. Close the lid of the jar tightly and shake well.
  3. Keep aside for further use.

  1.  Firstly, take a pan and add chopped bacon. Saute until golden brown and crisp.
  2. Transfer them into a paper towel-lined plate. Let it cool.
  3. Now peel the hard-boiled eggs and cut them into the quarter.
  4. Then, cut, rinse, and dry the Romania lettuce. Arrange them on a salad platter.
  5. After that, arrange chicken, eggs, avocado, tomatoes, onion, blue cheese, and bacon in rows over salad.
  6. Then sprinkle the chopped parsley over it.
  7. Now, drizzle the prepared dressing over the salad just before serving.
