Ingredients
- 6 slices of bacon, chopped & browned
- 1 medium head Romania lettuce
- 2 cooked chicken breast from a rotisserie chicken
- 1 large avocado, sliced
- 2 hard-boiled eggs
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup blue cheese ( or feta cheese), crumbled
- 2 tbsp parsley, finely chopped
Balsamic vinaigrette dressing
- 1 tbsp dijon mustard
- 3 tbsp balsamic vinegar
- 1 garlic clove, finely minced
- 1/3 cup extra virgin olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Method
Balsamic vinaigrette dressing
- Take a mason jar add some olive oil, balsamic vinegar, dijon mustard, garlic clove, peoper and salt
- Close the lid of the jar tightly and shake well.
- Keep aside for further use.
Cobb Salad
- Firstly, take a pan and add chopped bacon. Saute until golden brown and crisp.
- Transfer them into a paper towel-lined plate. Let it cool.
- Now peel the hard-boiled eggs and cut them into the quarter.
- Then, cut, rinse, and dry the Romania lettuce. Arrange them on a salad platter.
- After that, arrange chicken, eggs, avocado, tomatoes, onion, blue cheese, and bacon in rows over salad.
- Then sprinkle the chopped parsley over it.
- Now, drizzle the prepared dressing over the salad just before serving.
