Bored With Everyday Dal? Learn To Cook Dal Tadka In Three Ways

Dal remains constant food for every day. But who loves the same routine? It starts to get boring when we have the same food over and over. Tadka wali dal with just tandoori roti is like the comfort food we need from time to time. Now, wouldn’t it be amazing if we could cook our regular dal tadka in three different ways?

Dal is rich in proteins and is recommended by doctors and nutritionists on an everyday basis. Dal contains not only proteins but also fibre, magnesium, calcium, vitamin B and folate that helps in improving the overall health.

We are well aware that Dal benefits the skin and prevents acne too. It is said that if you are on a diet or not, you must include at least two bowls of dal in your meal every day. Scroll down for the dal tadka recipe.

Urad Dal

For Cooking Dal 

  • 1 heaped cup Toor dal
  • 2-3 heaped tbsp Moong dal, soaked
  • Water
  • 1 tsp Turmeric powder
  • ¼ tsp red chilli powder
  • ¼  tsp Asafoetida
  • Salt
  • 1 tbsp Ghee

Preparation

  1. Take a pot and add soaked toor dal, moong dal, water, turmeric powder, red chilli powder, asafoetida, salt, ghee and cook it.

For Panjabi Dal Tadka

Prepare time: 5 mins
Cook: 10 mins
Ready in:15 mins

Ingredients

  • 1 heaped tbsp Ghee
  • 1 tsp Cumin seeds
  • 1-2 cloves Garlic, chopped
  • 1 inch chopped Ginger
  • A medium Onion, chopped
  • Turmeric powder – 1 tablespoon
  • ½ tsp red chilli powder
  • ½ tsp Coriander powder
  • ¼ tsp Asafoetida
  • 1 medium Tomato, chopped
  • 1 heaped cup Cooked dal
  •  2 tbsp Coriander leaves, chopped

Preparation

  1. Heat ghee in a pan and add cumin seeds, garlic, ginger, onion and saute it for 2-3 minutes.
  2. Now add turmeric powder, red chilli powder, coriander powder, asafoetida and, mix them well and keep cooking for a minute.
  3. Next, add tomato and saute them and then add the cooked dal, mix it well and boil it for 5 minutes.
  4. Once boiled, add coriander leaves, mix and switch off the flame.

Serve it in a serving bowl and garnish it with red chilli powder and coriander leaves. Add some lemon juice if you like and have it with roti and rice.

For Lucknow style Dal Tadka

Toor Dal

Ingredients

For Paste

  • 1 medium Onion, roughly chopped
  • 2 cloves Garlic
  • 1 inch Ginger
  • 1 tsp red chilli powder
  • ½ tsp Coriander powder
  • ½ tsp Garam masala
  • ¼ tsp Asafoetida
  • 2 heaped tbsp Curd
  • Salt

For Tempering

  • 1 heaped tbsp Ghee
  • ½ tsp Shahi jeera or Black Cumin seeds
  • 2 Green cardamom
  • Bay leaf
  • Prepared Paste
  • 1 heaped cup Cooked dal

Preparation

For Paste

  1. Blend, onion, garlic, ginger, red chilli powder, coriander powder, garam masala, asafoetida, curd, and salt into a smooth paste.

For Tempering

  1. Take pan and heat ghee.
  2. Add black cumin seeds, green cardamom, bay leaf, let it crackle and the prepared paste.
  3. Cook the paste properly until it leaves ghee from the sides.
  4. Now add the cooked dal to the tadka and mix them well.
  5. Boil it for 5 minutes.
  6. Switch off the flame and serve it in a bowl and garnish with coriander powder, garam masala, red chilli powder and fresh coriander leaves.

Maharashtrian dal tadka

Ingredients

  • 2 tbsp Peanut oil
  • 1 tsp Mustard seeds
  • ¼ tsp Fenugreek seeds
  • 1 sprig Curry leaves
  • ½ tsp Turmeric powder
  • ½ tsp red chilli powder
  • 2 Drumsticks, cut in pieces
  • 3 tbsp Tamarind water
  • 1 tbsp Jaggery
  • Salt
  • 1 tsp Goda masala
  • 1 heaped cup Cooked dal
  • 2 tbsp Coriander leaves, chopped
  • 2 tbsp freshly Coconut, grated

 For GODA MASALA 

  • 1 cup coriander seeds
  • 7 – 8 cloves
  • 2 Bay leaves
  • 10-12 dry Byadgi chillies
  • 1 tbsp Cumin seeds
  • 1 tsp Asafoetida powder
  • ½ cup dried coconut, grated
  • 1 tbsp sesame seeds
  • 1-inch cinnamon stick
  •  ½ tsp Turmeric powder
  •  1 tsp Fenugreek seeds
  •  2 Star Anise
  •  1 tsp Black Stone flower
  •  2 tbsp oil

Preparation

For goda masala

  1. Dry roast the grated coconut in a heated pan until they turn golden brown.
  2. In the same pan, dry roast some red chillies and coriander seeds till you get the aroma. Add to the same bowl as the coconut.
  3. Now heat oil in the pan and sauté the remaining ingredients one at a time.
  4. Add them to the same bowl and let cool.
  5. Grind the roasted ingredients into a semi-coarse powder.

For dal tadka

  1. Heat oil in a pan and add mustard seeds, fenugreek seeds, curry leaves and let them crackle.
  2. Now add turmeric powder, red chilli powder, drumstick and saute them well.
  3. Add some water and cover it with a lid.
  4. Add tamarind water, jaggery, salt, goda masala once everything is cooked, and mix everything properly.
  5. Now add cooked dal and boil it for 5 minutes.

Add coriander leaves and grated coconut as garnishing, and Serve h
