The Dhaba style dal fry is really easy to cook and tastes amazing when paired with roti or jeera rice. When you have Dhaba style dal fry, you don’t need veggie to complete the meal, it itself is a complete meal. You can also cook the dhaba dal tadka at home with this quick recipe.

For Dal 

  • 2 tbsp ghee
  • ½ cup toor dal, soaked
  • 3 tbsp moong dal, soaked
  • 1-inch ginger, sliced
  • Salt to taste
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 green chilli
  • water – 1 ½ cups

For Tempering 

  • 1 tbsp ghee
  • 1 tbsp oil
  • ½ tsp cumin seeds
  • 1-inch ginger, finely chopped
  • ½ tbsp garlic, finely chopped
  • 1 medium onion, finely chopped
  • 1 tsp red chilli powder
  • ¼ tsp turmeric powder
  • Salt to taste

For 2nd Tempering 

  • 2 tbsp ghee
  • 2 tbsp oil
  • 3-4 garlic cloves, sliced
  • 2-3 whole dry Kashmiri red chillies
  • A pinch of asafoetida
  • ½ tsp Kashmiri red chilli powder
  • Coriander leaves, for garnish

Preparation For Dhaba Style Dal Fry

  1. Add some ghee to the pressure cooker and let it heat; add toor dal and moong dal to the pressure cooker and roast for almost 2-3 minutes.
  2. Next, add ginger, salt, turmeric powder, red chilli powder, salt and green chilli and mix really well.
  3. Then, pour water into it, and cover it. Allow cooking up to 3 whistles.
  4. Meanwhile, take a pan and heat ghee in it, add cumin seeds, ginger and garlic, saute till fragrant.
  5. Add onions to it and saute till translucent in texture.
  6. Add chilli powder, turmeric powder and salt according to taste, and mix really well.
  7. Cook for 2-3 minutes, till the rawness of the spices is gone.
  8. Add the boiled dal to this tempering and allow to cook for simmer for 3-4 minutes.
  9. No, prepare the second tempering.
  10. Heat ghee in a pan, add some water to it.
  11. Now, add garlic cloves, whole dry Kashmiri red chillies, asafoetida, Kashmiri red chilli powder and mix properly.
  12. Cook till it starts to splutter.
  13. Pour the prepared dal into a serving dish, garnish with coriander leaves.
  14. Pour the prepared tempering and serve hot.
