Summers are already here and in this hot weather everyone craves for something cold to eat and drink but mostly everyone likes to eat ice-cream in this season but it cannot be eaten often so there should some substitute for it. Shakes, falooda, juices, lemonade, pie, etc but there is one more recipe which is not only cold but also healthy .i.e Basundi.
Basundi is a sweet dish that can be served both hot or cold, it is made with milk, dry fruits, saffron and cardamom powder. It is most famous in Maharashtra, Tamil Nadu, Karnataka, Gujarat and Andhra Pradesh. This dish is served at various festival and it has many variants such as sitaphal basundi, anjeer basundi, mango basundi, angoor basundi and in North India a similar dish is called Rabri.

Ingredients
- 2-litre milk
- 2 tbsp almonds, chopped
- ½ cup sugar
- 2 tbsp pistachios, chopped
- Saffron strands
- ¼ tsp cardamom powder
- 2 tbsp cashews, chopped
For Garnish
Chopped dry fruits
Method
- In a wok, add 2 litres of milk and boil, keep stirring occasionally.
- Add chopped almonds, cashews, pistachios and mix well.
- Now boil milk on low flame and stir occasionally.
- Keep boiling until cream forms and scrape the bottom.
- Simmer it and boil for 30 minutes. Make sure it does not burn.
- When milk reduces to quarter, add sugar and saffron.
- Mix it well until sugar dissolves.
- Boil again for 5 minutes. Keep stirring.
- When thickens, add cardamom powder into it and mix well.
- Transfer it to a bowl.
- Garnish it with some chopped dry fruits.
- Serve hot or chilled.
