  • 5-6 Milly Potatoes, peeled 
  • Salt to taste 
  • ½ tsp Paprika powder 
  • ¼ cup Parmesan Cheese

  1. Cut the potatoes in ½ cm thickness and put them in water for about 15 minutes.
  2. Take a pot, and add water to it.
  3. Keep it toa simmering temperature and par-boil them. 
  4. Once done, drain them in a flat tray and spread evenly. 
  5. Deep freeze them for almost one to one and a half hours.
  6. Take a kadhai and heat oil in it for first frying. 
  7. Remove them from the freezer and fry them for about 80%. 
  8. Once fried, remove them on a paper towel. 
  9. Heat oil in a kadhai again for second frying. 
  10. Fry them completely.
  11. Then remove them on a paper towel. 
  12. Transfer hot fries to a mixing bowl, sprinkle some salt, and mix well. 
  13. Sprinkle paprika powder and garnish with parmesan cheese, if you like. 

Serve hot with ketchup and you may also add chaat masala for a desi twist.
