Butterfly pea tea or Thai blue tea is an earthy flavoured tea, a caffeine-free herbal mixture made by seeping either dried or fresh leaves of the Clitoria ternatea plant.

It also enhances the mood, but it comes with various health benefits like rejuvenation and lessening of wrinkles and signs of ageing, improving the growth of hair, and reducing stress.

  1. Take a saucepan and start boiling the water.
  2. If you are using fresh flowers, cut the green bottoms of the flower; otherwise, the dried flower can be used as they come.
  3. Once the water has boiled, turn off the stove and put the flowers in the saucepan, and cover it with the lid.
  4. After 5 minutes, strain the tea into another container.
  5. While the water is still warm, add honey and sugar(either simple or brown sugar, whatever you prefer) and stir properly.
  6. Now, take about ¼ – ⅓ of the tea into a glass with ice and add two teaspoons of lime juice. You will observe that the blue tea turned purple.
  7. Next, top up the drink with either soda or just plain water.
  8. You can put a slice of lime to garnish the tea.

The tea can be consumed like plain hot tea also. Most people prefer to drink it hot, while some people choose to have it like a magical cold drink with soda. If you want to have hot tea, do not add ice and soda to it.
