Ingredients

For Khandvi Batter

  • 1 cup besan (gram flour) or 100 grams besan
  • ¾ cup sour curd, about 150 grams (
  • 2.25 cups water, to be mixed with the curd
  • 1 teaspoon ginger + green chili paste
  • about ½ inch ginger & 1 green chili crushed in a mortar-pestle
  • ¼ teaspoon turmeric powder
  • ⅔ teaspoon salt
  • 1 pinch asafoetida (hing)

For The Filling

  • 2 tablespoons fresh grated coconut
  • 2 tablespoons chopped coriander leaves

For The Khandvi

  • Tempering/Seasoning
  • 1 tablespoon oil
  • 8 to 10 curry leaves
  • 1 teaspoon mustard seeds
  • 2 teaspoons white sesame seeds
  • 1 teaspoon green chili, chopped or ½ red chili powder

Preparation

  1. We will start with the batter for Khandvi
  2. Take a bowl, and add yoghurt to it.
  3. Next, add water to it and stir until it is smooth.
  4. Now, add ginger-green chilli paste, turmeric powder, salt, and hing to it.
  5. If you are using fresh yoghurt, add ½ tablespoon lemon juice to add the sourness.
  6. Next, add besan, and stir with a whisk or fork until lumps are dissolved.
  7. Then, take a plate and spread oil over it.
  8. Add the batter to a pan, and stir it on a low flame. Keep stirring until the batter is really thick.
  9. Make sure that lumps should not be formed.
  10. Finally, spread the thickened batter (once cool) on the greased plate.
  11. Once it has cooled down, we will start making rolls.
  12. Sprinkle coconut and coriander leaves mixture on it.
  13. Now, cut into strips and start rolling each strip tightly.

  1. Do it with all the strips and plate them well.
  2. Now take a container and heat oil in it.
  3. Next, crackle the mustard seeds in it.
  4. Then, add curry leaves, green chillies, and fry for a few seconds.
  5. Add the sesame seeds and fry until they change colour and start to crackle.
  6. Garnish the rolled khandvi with this seasoning.

You may add more coconut from the top. Serve the khandvi rolls with mint or coriander chutney. Khandvi can turn out to be a healthy and soulful evening snack.
