For this mushroom masala recipe, you may use either white button mushroom or cremini mushrooms.

For Mushroom gravy
- 2 tbsp Oil
- 1 tbsp ghee
- cumin seeds – 1 tsp
- 1 inch Ginger/ sliced
- 3-4 Garlic cloves
- 4 onions, sliced
- ½ tsp Turmeric powder
- 1 tsp coriander powder
- 1 tsp Red chilli powder
- 2 Tomatoes, chopped
- 2 tbsp Curd, Beaten
For rinse the mushroom
- 250 gms Mushroom
- ¼ cup Wheat flour
- For Mushroom fry
- Oil – 1 tsp
- 1 tsp Ghee
- Bay leaf
- 1-inch Cinnamon stick
- 1 clove
- 4 Black peppercorn
- Green cardamom – 1
- 1 black cardamom
- Onion, sliced – 1
- 1 tsp red chilli powder
- Salt to taste
- A pinch of Kasuri methi
- 3-4 coriander spring
For garnish
- 2-3 Coriander sprig

- We will start by cleaning the mushrooms.
- Cleaning mushrooms is quite easy but can be time-consuming.
- Take each mushroom and thoroughly apply wheat flour to it and clean them properly.
- If you wish to jump this step, you can simply clean it with water, like other veggies.
- Now, take a kadhai and add oil, ghee, cumin seeds, ginger slice, garlic clove, and onion and saute well.
- Next, add turmeric powder, coriander powder, red chilli powder, and mix well.
- Then add tomato, and saute properly.
- Add salt according to your taste and curd.
- Let it cook till the tomatoes become soft and squishy; add water as required.
- Blend the mixture in a blender and keep it aside.
- In a pan, heat oil, ghee and add bay leaf, cinnamon stick, cloves, black peppercorn, green cardamom, black cardamom and saute them properly.
- Add chopped onions and saute them till they turn translucent, then add red chilli powder, cleaned mushroom, salt according to your taste and water and saute properly.
- Add the mushroom gravy in it and cook for a minute or two.
- Sprinkle Kasuri methi, and garnish with coriander spring.
Serve the mouthwatering mushroom masala hot with rice or roti.
