Puran Poli is a sweet paratha that is stuffed with a sweet lentil filling made from chana dal and jaggery. It is a popular Maharashtrian recipe made during Ganesh Chaturthi or Diwali. 

During the Ganesh Chaturthi festival, Modak, Puran Poli, and Nariyal ladoo are some famous prasads that are prepared in Maharashtra.

The sweet stuffing is jaggery which is an unrefined sugar that is made from sugar cane juice. So, here is your puran poli recipe.

For Puran Mixture 

  • 1 cup powdered jaggery
  • 1 cup of chana dal 
  • Add about 3 cups of water for cooking the chana dal in a pressure cooker
  • 2 teaspoons of ghee
  • 1 teaspoon fennel powder 
  • ¾ to 1 teaspoon dry ginger powder 
  • ½ teaspoon cardamom powder
  • ¼ teaspoon nutmeg powder

The Poli – Outer Covering

  • 1.5 cups whole wheat flour 
  •  ½ cup all-purpose flour
  • 4 tablespoon oil or ghee 
  • ½ teaspoon salt
  • ¼ teaspoon turmeric powder 
  • Add water as per the requirement to knead a smooth dough
  • Add oil or ghee as required for roasting the Puran Poli

Preparing Puran

  1. First of all, rinse the chana dal very well. 
  2. Take a pressure cooker, and cook the chana dal for 6 to 7 whistles. 
  3. Allow the pressure to settle down on its own, strain the cooked dal. 
  4. In a pan heat ghee and add ginger powder, cardamom powder, nutmeg powder, and fennel powder. 
  5. Fry for some time on low heat.
  6. Now, add the chana dal and jaggery. 
  7. Stir it and let the Puran mixture cook on a low flame till it becomes dry.
  8. Once the stuffing is dry and thick, switch off the flame.
  9. Let it cool and then mash the mixture with a masher. 
  10. Keep aside.

Preparing The Poli Dough

  1. Meanwhile take whole wheat flour, all-purpose flour, and salt in a bowl and mix well.
  2. Now, add a little bit of water and ghee and mix it.
  3. Add water as needed and knead the dough smooth. 
  4. Cover and keep it aside for about 15-20 minutes.

Making Puran Poli

  1. Take a ball from the smooth dough prepared.
  2. Roll it round and place a portion of Puran mixture in the center of the rolled dough.
  3. Join all the edges together at the center. 
  4. Sprinkle some flour and start rolling the dough.
  5. Make a medium or large circle.
  6. Now, on a heated tawa, spread some ghee. 
  7. Put the rolled poli/dough circle on the Tawa.
  8. When one side gets browned, turn over and cook the other side till you see some brown spots.
  9. Once the second side gets browned, then turn over and apply some ghee.
  10. The poli should be cooked well with brown spots and golden.

Serve the Puran poli warm or at room temperature with milk, or ghee.
