Seviyan is nothing but Vermicelli Kheer. It is a super delicious Indian dessert made using vermicelli and milk.

Kheer is a pudding that is prepared by cooking rice or vermicelli in milk and sugar. The one prepared by using vermicelli is known as seviyan kheer.

  • 1 tbsp Ghee
  • 1 cup Sevai
  • Full Fat Milk – 1 liter
  • 15-20 Raisins
  • ½ cup Sugar
  • 1 tsp Cardamom Powder
  • Pistachio 
  • Almond Slivers for garnishing

  1. Take ghee in a heavy bottom kadhai and heat on medium flame.
  2. Now, add seviyan and roast on low heat till golden brown in colour.
  3. Keep the kadhai aside.
  4. Next, heat milk in the same kadhai.
  5. And when it starts to boil, add sevai and raisins to it.
  6. Cook till the kheer thickens to the desired consistency.
  7. Then, add cardamom powder and sugar and mix really well.
  8. Transfer the kheer to a serving bowl.

Garnish with pistachio and almond slivers. Serve hot or chilled as you please. Enjoy this delightful recipe with friends and family, feel the festivities.
