Mumbai’s Famous Vada Pav Recipe

Vada pav is quick recipe prepared with potato mixture, batter and pav (bun). Vada is prepared with a potato mixture consists of potato, garlic, chilli, and spices, it is shaped like a ball and then dipped into the gram flour, salt and water batter. Then, it is deep-fried in oil. It is served with pav, chutney, and fried chillies. It was invented by Ashok vaidya in 1966. He opened his shop opposite the Dadar railway station and decided to make a quick dish for the passengers and passerby.

For Potato Mixture

  • 6-8 garlic cloves, crushed
  • 4-5 green chillies, crushed
  • 3-4 potatoes, boiled, peeled & mashed
  • 1/4 cup oil
  • 1 tbsp mustard seeds
  • 1/4 tsp asafoetida
  • 2 sprig curry leaves
  • 1/2 tsp turmeric powder
  • salt to taste
  • 2 tbsp coriander leaves, chopped

For Batter

  • 1 cup gram flour
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chilli powder
  • salt to taste

For Chilli Fry

  • 5-6 green chilli, slit
  • oil for frying

For Vada Pav Chutney

  • 2 tbsp oil
  • 1/2 cup peanut
  • 4-5 garlic cloves
  • 1/2 cup fried besan batter crumbs
  • 2 tbsp red chilli powder
  • salt to taste
  • oil for frying

For Serving

  • 1 packet of pav/buns


For Potato Mixture

  1. In a pan, add oil, mustard seeds, asafoetida, curry leaves, garlic, green chilli, turmeric powder, and potatoes. Mix well.
  2. Then, add salt, and coriander leaves. Mix well, let it cool and keep aside for further use.

For Batter

  1. In a mixing bowl, add gram flour, turmeric powder, red chilli powder, and salt.
  2. Mix well and now add water occasionally as per the consistency and mix well.
  3. Keep aside till in use.

For Chilli Fry

  1. For chilli fry, heat oil in a pan and add green chilli and fry well.
  2. Keep aside till in use.

For Vada Pav

  1. To make vada pav, take the potato mixture and pinch a small portion.
  2. Now, shape it like a medium size ball and dip it into the prepared batter.
  3. Then, deep fry it until golden brown, transfer it into a tissue paper-lined plate.

  1. Make the rest of the vada with the same process.

For Fried Besan Bread Crumbs

  1. With the remaining batter make the fried bread crumbs by drizzling the batter in the hot oil.
  2. Deep fry it until crisp and golden. Remove and keep aside for further use.

For Vada Pav Chutney

  1. In a pan, add oil, peanut, garlic cloves, fried besan batter crumbs, red chilli powder, and salt. Mix well.
  2. Now, transfer it into a mixer grinder jar and coarsely grind it.

For Serving

  1. Take a pav and cut it from the centre.
  2. Now place the deep-fried vada in the centre and also add 1 fried chilli.
  3. After that, place it on the serving plate.
  4. Serve it with prepared chutney and fried green chillies.
