Manchurian is an Indo-Chinese dish that is cooked by making a crispy ball dipped in gravy. The Manchurian can either be consumed dry or in the sauce.

Cabbage is usually an essential vegetable in the Manchurian balls and vegetables like carrots, bell peppers, and even cauliflower. The Vegetable Manchurian balls are seasoned with aromatics like onions, garlic, and ginger. So, let’s begin the veg manchurian recipe.

For Manchurian Balls

  • ¼ cup Spring Onion Greens, finely chopped
  • ¼ cup Cabbage, finely chopped
  • Green Beans, finely chopped – ¼ cup
  • ¼ cup Carrots, finely chopped
  • 1-inch ginger, finely chopped
  • Salt to taste
  • 1 tsp White Pepper powder
  • 1 cup Refined Flour
  • 2 tbsp Cornstarch
  • Oil for deep frying

For Gravy

  • 2 tbsp Oil
  • 1-inch Ginger, finely chopped
  • 3-4 Garlic Cloves, finely chopped
  • 2-3 Green Chillies, finely chopped
  • ½ tsp Soy Sauce
  • Vegetable Stock, as required
  • ¼ cup Spring Onion Greens, finely chopped
  • ¼ cup Coriander Leaves, finely chopped
  • 1 tbsp Cornstarch slurry
  • Prepared Manchurian Balls

For Manchurian

  • Dry 2 tbsp Oil
  • 1-inch ginger, finely chopped
  • 3-4 Garlic Cloves, finely chopped
  • ½ tsp Soy Sauce
  • ¼ cup Spring Onion Greens, finely chopped
  • ¼ cup Coriander Leaves, finely chopped
  • ½ tbsp Cornstarch slurry

Preparation For Veg Manchurian

Veg Manchurian Balls

  1. Take a bowl to mix and add all the ingredients, and mix really well.
  2. Now, take a kadhai, and heat oil for deep frying.
  3. Fry the Manchurian balls till they turn golden brown in colour and crispy in texture
  4. Keep aside.

Gravy

  1. Take a kadhai and add oil.
  2. Add ginger, green chillies and garlic and to it, mix really well and cook for about 2 minutes.
  3. Now, add soy sauce and vegetable stock to it, and mix properly.
  4. Next, add spring onion greens and coriander leaves, and cook for almost 2-3 minutes.
  5. Then, add the cornstarch slurry to it, mix well and let it come to a boil.
  6. Finally, add Manchurian balls, mix well and let the gravy thicken.

Enjoy the gravy vegetable Manchurian hot, and you may also have dry Manchurian; the recipe is the same; you just don’t have to prepare gravy for it.
