Aam Panna is an Indian-origin beverage, and it is specially made to resist heat. Earlier, there were not cold drinks or glucose, so people used to make aam panna to quench thirst, to cool down body temperature. It is yellow or light green in colour and sour in taste.

Ingredients
Black Peppercorns

  • 5 medium raw mango
  • 1-inch ginger, peeled & sliced
  • Salt to taste
  • 1 tbsp fennel seeds
  • 2 cups of water
  • 1 1/3 cups sugar
  • A handful of mint leaves

For Masala

  • 1 tbsp cumin seeds
  • 2-3 green cardamom pods
  • 8-10 black peppercorns
  • Salt to taste

For Serving

  • Few ice cubes
  • Coldwater

Method

  1. In a pressure cooker, add raw mango, 2 cups of water and salt.
  2. Cover it and cook for 2-3 whistles.
  3. Turn off the flame and let it cool completely.
  4. Peel the skin of mango and scrape the pulp of it.
  5. Transfer the mango pulp into a bowl and add ginger and mix well.
  6. In a small glass, add fennel seeds and water and let it soak for few minutes.

For Masala

  1. In a pan, add cumin seeds, green cardamom, black peppercorns and salt and dry roast it.
  2. Transfer it into a bowl and let it cool.
  3. Transfer it into a grinder jar and grind it into a fine powder.
  4. In the same jar, add mango pulp, soaked fennel seeds, salt and blend it into a smooth paste.
  5. Transfer it into a bowl.
  6. In the same jar, add sugar, mint leaves and ice cubes and a spoonful of prepared paste, and grind it into a smooth paste.
  7. In a tall glass, add a spoonful of aam panna concentrate, ice cubes and pour chilled water, and mix it well.
  8. Garnish it with fresh mint leaves.
