  • 12 ounces Spaghetti
  • 1-litre water
  • Salt to taste
  • 3 tbsp Olive oil
  • 10 Garlic cloves, chopped
  • 1 Fresh red chilli, chopped
  • Fresh parsley leaves, finely chopped

  1. In a pan, add 1-litre water, 7g salt and pasta and boil for 9 minutes. Roll the pasta with the water so that it can cook evenly.
  2. Meanwhile, in a shallow pan, add 3 tbsp olive oil, chopped garlic, red chilli and parsley and sauté well.

Note: Don’t let the garlic turn brown.

  1. Add little pasta water and parsley to it and mix well.
  2. Drain the water from the pasta well and add it to the pan and mix well.
  3. Sprinkle some salt over it and toss well.
  4. Transfer it to a plate and pour a few drops of olive oil on top of it.

Serve this dish with Caesar salad and toasted bread.
