Ingredients

  • 1 1/2 tbsp Coriander seeds
  • 3/4 tsp peppercorns
  • One whole mace
  • Four nos, green cardamom
  • 1 tbsp fennel seeds
  • Four nos cloves
  • 1-inch cinnamon stick
  • One nos star anise
  • Four nos red chillies
  • 1/2 cup desiccated coconut

  • 1 tsp cumin seeds
  • 500g chicken with bone
  • 3/4 tsp turmeric powder
  • 1/2 tsp salt
  • 1 tsp lemon juice
  • 2 tbsp vegetable oil
  • 15-20 curry leaves
  • 150g shallots, cut into half
  • Two medium tomatoes, sliced.
  • 1 tbsp ginger garlic paste
  • Salt to taste
  • 3/4 cups of water

  1.  In a pan, add coriander seeds, fennel seeds, cumin seeds, peppercorn, mace, green cardamom, cloves, cinnamon stick, star anise, and red chilies. Dry roast them on low flame for 3 minutes.
  2. Now add desiccated coconut, mix and roast it until the coconut changes its color.
  3.  Turn the flame off. Let the mixture cool down.
  4. After a while, transfer this roasted mixture into a mixer grinder jar and coarsely grind it.
  5. Transfer the entire mixture to a bowl, and keep it aside for further use.
  6. In a bowl, add chicken, turmeric powder, salt, and lemon juice. Mix it well and marinate the chicken. Let it rest for 15 minutes.
  7. After that, add oil to a pan and then add curry leaves, shallots and cook until it turns translucent.
  8. Then add sliced tomatoes, mix and cook until they soften. Now add ginger garlic paste, mix and stir continuously.
  9. Now add marinated chicken, mix and cook for 2 minutes on medium to high flame.
  10. After 2 minutes, add prepared masala, salt to taste, and mix everything properly.
  11. To let the taste dissolve it fully, let it cook for about five minutes on a low flame.
  12. Then after 5 minutes, mix and keep stirring and add water. Stir and cover it again.
  13. Cook on a medium flame for 15 more minutes.
  14. After 15 minutes, turn off the flame, and the Chettinad chicken is ready.
