Oyster stew is a part of The Gambian cuisine and the stew is made with oysters. In the Gambia, oysters are grown in swamps on mangrove roots. It is very popular in the United States and is brought to the US by Irish Immigrants as Catholic Customs.

Oyster is a symbol of the arrival of the winter holiday season and it is available in December. Thus, in the Southern United States, oyster stew is prepared on Christmas Eve and in New England cuisine it is served for Thanksgiving.

This is an easy oyster stew recipe that can be made in few minutes and very healthy and good for health. Oysters are highly nutritious and contain Zinc which improves night vision, rich in protein and a good source of phosphorus, calcium and potassium.

Ingredients

  • 340g Fresh raw oysters
  •  1/4 tsp white pepper
  • 2tbsp butter
  • 1 quart half and half, whole milk
  •  2 green onions, chopped
  • ¼ tsp salt
  • ¼ tsp cayenne pepper (Red Chillies) or Tabasco sauce

For Garnishing

  • Sliced green onion

For serving

  • Crackers

Preparation

If you are using fresh oysters, you need to check if the oysters are good or alive. To check, tap it and they should sound like the rock and not hollow. Once checked, steam it so they can open easier.  To open oyster put the larger shell on the bottom and small shell on top, open oysters from the hinge, pop and cut it in half.

  1. In a saucepan, add butter heat it, add onion and sauté it until it turns soft.
  2. Now add milk, salt, white pepper and cayenne pepper or Tabasco sauce.
  3. Add oysters and cook on low heat until the edges of oysters start to curl. Don’t boil the mixture only cook until it turns hot.
  4. Transfer the stew to a bowl and garnish it with sliced onion.

Serve this dish with oyster crackers and avocado salad; this combination will make this dish super healthy. Enjoy the delightful oyster stew with your friends and family.
