 Ingredient

 For Cooking Rice

  • 1 tbsp Ghee
  • 2 inches Cinnamon stick
  • 2 Bay leaves
  • Star anise – 1
  • 5-6 Black peppercorns
  • 1 ½ cup Kolum rice, soaked
  • Water
  • Salt

For Gravy

  • 2 tbsp Ghee
  • 1 tbsp Oil
  • Bay leaf
  • Star anise-1
  • 1-inch Cinnamon stick
  • 1 inch Ginger
  • 3-4 cloves Garlic
  • 3 fresh green chillies
  • 5-6 Curry leaves
  • 3 medium Onion, sliced
  • 2 medium Tomato
  • 1 tbsp Coriander powder
  • 1 tsp red chilli powder
  • ½ tsp Black pepper powder
  • 2 heaped tbsp Sour Curd
  • Salt
  • 6 eggs, hard-boiled
  • Water 

 Other Ingredients

  • ¼ cup Saffron milk
  • 2 heaped tbsp Fried onion
  • 2 fresh green chillies
  • A few Mint leaves
  • Mint & Coriander leaves

 Preparation

 For Cooking Rice

  1. Take a Kadhai, and heat ghee and add cinnamon sticks, star anise, black pepper cons, bay leaves sauté them for a minute.
  2. Now add the kolum rice and sauté it properly with light hands for 1-2 minutes on medium heat.
  3. Next, add water, salt and let it cook on medium heat until 80% cooked.
  4. Once done, remove and keep aside. 

For Gravy

  1. Heat ghee & oil in a kadhai and add bay leaf, star anise, cinnamon sticks, ginger, garlic, green chillies, curry leaves, onion and sauté until lightly golden brown on medium-high heat. Now add the tomatoes and cook until soft on medium heat.
  2. Next, add red chilli powder, coriander leaves, black pepper powder and sauté them until fragrant.
  3. Then, add the sour curd, salt and sauté until the ghee starts coming from sides.
  4. Put the hard-boiled eggs in and add some water to it.
  5. Mix it properly and cook for 2 minutes. 
  6. Finally, finish it with a handful of mint & coriander leaves mix.

For Assembling Egg Biryani

  1. In a cooker add a layer of cooked rice then place the boiled eggs one by one and pour over the gravy.
  2. Then add another layer of cooked rice and finish it with saffron milk, fried onion, green chillies, some mint leaves.
  3. Now cover and let it dum on low heat for 5-10 minutes. 
  4. Then switch off the flame.

Serve the biryani hot in a serving plate with raita and garnish with fried cashew nuts, fried raisins. This can be served as a delicious dinner or lunch. Simply pair the hot egg biryani with some plain yoghurt or raita and you are good to go on a delicious food journey where you would meet variants of flavours.
