Gujarat is known for its rich heritage, culture, trade, festivals and cuisine. Gujarati food is very healthy and tasty. Some Gujarati foods are Khandvi, Fafda, Jalebi, Dhokla and Undhiyu. Undhiyu Recipe is Gujarat’s traditional recipe.

Undhiyu is a main course dish and this dish is the regional speciality of Surat, Gujarat and its name undhiyu comes from the word “undhu”, which means upside down, because the dish is traditionally cooked upside down underground in earthen pots (matlu), which are fired from above.

This dish is especially served on the “Uttrayan Festival” (Kite festival), which is another famous festival of Gujarat after Navratri. Ingredients

For Fritters

  • 1 cup wheat flour
  • 2 tbsp gram flour
  • 1/3 cup methi
  • 1 tsp ginger garlic chilli paste
  • ½ tsp turmeric powder
  • Salt to taste
  • 1 tsp oil

For Undhiyo

  • 8 tbsp oil
  • 4 tbsp peanuts
  • 3 tbsp sesame seeds (till)
  • 1 ½ tsp ginger garlic chilli paste
  • 1 tbsp garlic paste
  • 4 tbsp grated dry coconut
  • 2 tbsp sugar (optional)
  • 1 ½ cumin, coriander powder
  • 1 tsp ajwain
  • ½ asafoetida
  • ½ tsp Turmeric powder
  • ¼ cup peanuts
  • 2 chopped, sweet potatoes
  • 1 yam (suran)
  • 2 bananas
  • 3 eggplants, cut into half
  • 6-7 small potatoes, chopped
  • 250 gm Green bean pods

For Fritters

  1. In a bowl, add wheat flour, gram flour, fenugreek leaves, ginger garlic chilli paste, turmeric powder, salt and mix well
  2. Now add oil and little water, make a dough.
  3. Grease your palms with oil and make fritters from the dough.
  4. In a pan, heat oil and deep fry fritters.
  5. Spread tissue paper on a plate and transfer the fritters and keep the plate aside.

For Undhiyo

  1. Take a pressure cooker, add some oil and let it heat, add ajwain, sauté it and add green beans, salt, mix it.
  2. Add ¼ cup water, mix well and cover the lid and cook on medium flame until two whistles.
  3. Now, the potatoes are perfectly boiled, so turn off the flame and transfer the boiled green beans into a bowl, keep aside.
  4. In a grinder, add peanuts and sesame seeds, grind them to make powder.
  5. Take a frying pan, add oil and sweet potato, fry it until it turns golden brown and transfer it to a plate.
  6. On the same pan, add potato, yam and fry until it turns golden brown, transfer it to the plate.
  7. Add 7 tbsp oil in a pressure cooker, heat oil and add ajwain, asafoetida, ginger garlic chilli paste, garlic paste, turmeric powder and cumin-coriander powder and sauté it.
  8. After 1 minute, add peanut, sesame seeds powder prepared earlier, add grated coconut and mix well on medium flame.
  9. Now add all fried vegetables, fritters, eggplants and boiled green peas.
  10. Add salt, sugar, peanuts and mix well.
  11. Then add ¼ cup water, mix it again.
  12. Now cover the pressure cooker with a lid and cook on medium flame until two whistles.
  13. Turn off the let the utensil cool.
  14. Add banana pieces into the same cooker, turn on the flame, mix it well.
  15. Cover the lid slightly and cook for 2 minutes on medium flame.
  16. Add coriander leaves, mix them well and turn off the flame.
  17. Transfer the undhiyo serving plate and garnish it with coriander leaves.
