It is said that kachori was invented by Marwari traders because they used to travel a lot and they needed a snack that is not easily perishable and should be rich in protein. So, they invented the different types of kachori and thus, the kachori was invented at Marwar.  Matar kachori is a super healthy snack that can be eaten at breakfast or as an evening snack. So, here is the quick matar kachori recipe for all of you.

Ingredients

Matar Kachori

For Ground Masala

  • 2 tbsp dried coriander seeds
  • 2 tbsp fennel seeds
  • 1 tbsp cumin seeds

For Matar Kachori Filling

  • 2 tbsp ghee
  •  3 green chillies
  • 1 tbsp ginger, chopped
  • ½ tsp black pepper powder
  • ¼ tsp asafetida
  • ½ tsp degi red chilli powder
  •  1 tsp fennel seeds
  • 2 tbsp prepared ground masala
  • ½ cups of water
  • Salt to taste
  • 1 ½ cups green peas

For Kachori Dough

  • 2 cups refined flour
  • 4 tbsp ghee
  • Salt to taste
  • Water as required

For Instant Achaar

  • ¼ cup mustard oil
  • 1 tsp fennel seed
  • 1 tbsp mustard dal
  • 10-12 fresh green and red chilli
  • 1 inches ginger, Julienne
  • 2 tbsp vinegar
  • 1 tbsp sugar
  • Salt to taste

Method

For Matar Kachori Filling

Take a pan, add some coriander seeds, cumin seeds, fennel seeds and roast them well, coarsely crush them.

2.Take a pan, heat it and add ghee, fennel seeds, ginger, green peas and stir.

3.Now add asafetida, degi red chilli powder, green chilli, salt and water, mix well and cover it and let them cook.

4.Once cooked, add prepared ground masala powder, black pepper powder and cook, till it gets soft.

5.Then mash it properly and let it cook.

For Dough

  1. In a bowl, add refined flour, salt, ghee and mix it well.
  2. Add cold water to it and knead soft dough. Let it rest.

For Instant Achaar

  1. Take a pan and heat, add mustard oil, fennel seeds, mustard dal let it crackle.
  2. Now add ginger, red and green chillies, sauté for a minute.
  3. Add vinegar, salt, and sugar and stir it well.
  4. Transfer the instant achaar to a bowl.

For Kachori

1.Make lemon sized balls from the dough.

2.Grease the rolling board or rolling pin with ghee.

3.Take a dough ball, flatten it and adds a spoonful of filling and close it well.

4.Place the dough ball on the rolling board and roll out it into a thick poori.

5.Repeat the process with all dough balls.

6.Heat oil in a pan and deep fry kachori until golden brown on both sides.

7.Transfer it on tissue paper.

8.Instant kachori is ready to serve.
