Idli is like rice cake and is made with rice flour, fermented curd batter then poured into a mould and steamed. It can also be made with semolina or suji. Idli 65 is made with cooked idli, which is then fried and seasoned with the tempering of spices and herbs. Follow this idli 65 or masala idli recipe, and make this dish at home.

Ingredients

coriander Powder

For fried idli

• Take 4-5 idlis, cut in 4 pieces
• Add ½ tsp degi red chilli powder
• Put Salt according to your taste
• ¼ tsp roasted cumin powder
• Take 2 tbsp curd
• Take oil for frying
• Add 1 tbsp rice flour

For tempering

• Take ¼ tsp turmeric powder
• Add 1 tsp mustard seeds
• Take about ½ tsp fennel seeds
• Add 1-inch ginger, chopped
• Now take 3-4 garlic cloves, chopped
• 1 sprig of curry leaves
• Take 2-3 dry red chillies
• ½ tsp coriander powder
• 1 tsp degi red chilli powder
• 2 tbsp heaped curd
• Take about ¼ roasted cumin powder
• Salt to taste
• 2 tbsp oil
• ¼ tsp black pepper powder

For Garnish

Fresh coriander leaves

Method

For fried idli

  1. In a mixing bowl, add idlis, salt, degi red chilli powder, cumin powder, rice flour and coat it well.
  2. Then add curd and fold it lightly.
  3. Heat oil in a pan and add marinated idlis and fry them on medium flame until golden and crispy.
  4. Remove them in absorbent paper and keep them aside for future use.
Turmeric Powder

For tempering

1. In a Kadai, put some oil and heat it, add mustard seeds, fennel seeds, ginger, garlic, curry leaves, dry red chillies and sauté for a minute.
2. Then add curd and sauté it until it leaves oil from the sides.
3. After it add coriander powder, degi red chilli powder, cumin powder, turmeric powder, and salt and sauté them well.
4. Now add fried idlis and toss it well and make sure it is properly coated.
5. Sprinkle some black pepper powder and transfer it to a plate.

Serve the spicy idli 65 with ketchup and chutney.
