So, today’s Gujarati special is Methi khakhra.

Khakhra is a snack or thin cracker prepared with dough of wheat flour, chickpea flour, salt, spices and oil. It is originated in Gujarat and served during breakfast and as an evening snack. It has many variants like jeera, pudina, pav bhaji, and methi khakhra.

Ingredients

Flour

  • 2 cups wheat flour
  • 1 tbsp dry fenugreek/ Kasuri methi
  • ¼ cup chickpea flour
  • 2-3 tbsp oil
  • ½ tsp turmeric powder
  • ¾ tsp cumin seeds
  • ¼ tsp red chilli powder
  • Salt to taste

Method

  1. Take a mixing bowl, add chickpea flour, wheat flour, chickpea flour, dry fenugreek, salt, turmeric powder, red chilli powder, cumin seeds, and oil. Mix everything well.
  2. Now add water occasionally and knead soft dough.
  3. Cover and keep it aside for 20 minutes.
  4. After that, grease your palm with oil and knead the dough again.
  5. Take a small portion from the dough and make a ball.
  6. Then flatten the ball with your hands and coat it with wheat flour.
  7. Roll it into a thin roti with the help of a rolling pin.
  8. Heat a flat pan, and lower the flame.
  9. Now place the roti on the pan and roast it from both sides.
  10. Now press the thepla with a small bowl from both sides and roast it until crisp.
  11. Repeat the same process to make some more doughs.
  12. Methi Khakhra is ready to serve.
  13. Transfer all khakhras in an air-tight container.

Serve it with singdana dry chutney, or you can also munch it with tea. Enjoy this crunchy Gujarati snack.
