Ingredients For Khubani Ka Meetha

  • 250 gms dried apricots
  • 1-litre water
  • 1 cup apricot water
  • 3 tbsp boiled almonds, peeled and blanched
  • 1 cup powdered sugar

  1. In a bowl, add water and dried apricots and let them soak for 8 hours.
  2. After 8 hours, strain the apricots with the help of a strainer and remove excess water from them.
  3. Now keep that water for further use.
  4. After that deseed all the apricots.
  5. Heat a flat pan on low flame and add apricots, apricot water and boil it, and stir occasionally.
  6. Cover the pan with a lid and allow it to cook on low flame for 10-15 minutes until tender.
  7. Remove the lid and stir it. Now add powdered sugar and mix well.
  8. Cover it again and cook it for 7 minutes on low flame. Let the sugar caramelize.
  9. After 7 minutes, open the lid and stir continuously.
  10.  Now mash the apricots with the help of a masher.
  11. Add almonds and mix it well. Cover it and cook it for three more minutes.
  12. Turn off the flame and transfer this into a bowl.

The exotic apricot dessert is ready to serve. You can serve this dish hot or cold. To give it a twist, pair it with vanilla ice cream.
