Chawal as a dessert has always been used for preparing kheer; why not try something different this time? Meethe chawal is a very delicious dessert that can be cooked with even leftover rice.

Meethe chawal is a popular North Indian flavoured rice recipe or meethe chawal recipe that is cooked by adding milk, mawa, sugar, and saffron to the rice.

They are also known as zarda chawal and are quite dry in texture, and have very little moisture. They taste best when they are fresh.

Meethe chawal is a traditional Punjabi sweet served during festivals like Basant Panchami or Diwali. The dry fruits add the most taste to these meethe chawal and not only gives it taste but also a nice appearance.

Ingredients

  • ¼ cup ghee
  • Raisins – 2 tbsp
  • Almonds, chopped – 2 tbsp
  • 2 tbsp Cashew nuts, chopped
  • A pinch of Saffron
  • 2 Cardamom pods
  • 1 cup Sella rice, soaked
  • A pinch of salt
  • ½ cup of sugar
  • ¼ cup Mawa
  • 6 Pineapple slices
  • 2 tbsp Ghee
  • 1 tbsp Castor sugar
  • 2 tbsp Pistachios, chopped

Preparation

    1. Take a pot and heat ghee in it.
    2. Now, add raisins, almonds, cashew, saffron, and mix them all properly.
    3. Next, add water, cardamom pods, Sella rice, and salt to taste.
    4. Cook the rice properly.
    5. Then, add sugar and mawa and let it cook till the sugar coat the rice well.
    6. Do not mix it.
    7. Cover with a lid. Keep the flame meddium and allow it to cook for about 7-8 minutes.
    8. Now, remove the lid.
    9. You will observe that the sugar crystals have started to melt.
    10. Now smoothly give it a stir and cover again.
    11. In another pot, put pineapple slices, add ghee, castor sugar, and cooked rice, and gently press it down.
    12. Add mawa, pistachios, almonds and cook for another 10-12 minutes
    13. Turn off the flame.
