  • 4 cups corn, cut from the cob
  • 1 tbsp olive oil
  • red bell pepper chopped – 1/2
  • 1/2 small red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 6 green onions, chopped
  • 1 jalapeno pepper, diced
  • 1/2 avocado chopped
  • 4 tbsp lime juice 
  • 1/2 tsp cumin ground
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper ground
  • 1/4 tsp salt
  • 2 tbsp sour cream 
  • 2 tbsp mayonnaise
  • 1/2 cup cotija cheese, crumbled

  1. Firstly, get the corn off the cob.
  2. Take olive oil in a large pan on put it on high flame.
  3. Next, add the corn and stir it properly. 
  4. Then, cook them for about 3 to 5 minutes or until the corn starts to char.
  5. Take a large bowl and put the corn in it. Allow it to cool down for sometime.
  6. In the same bowl, add the all remaining ingredients. 
  7. Stir everything together very well and make sure they combine properly. 
  8. Add lime juice,pepper and salt according to your taste.

Garnish it with additional cheese and cilantro and the Mexican corn salad is ready to serve.
