  • ½ tsp heaped coriander powder
  • ½ cup tomato puree
  • ¾ tsp prepared paneer masala
  • Fried paneer

For Garnish

For Sirka Pyaaz

  • 1 cup vinegar
  • 1 medium beetroot, small cube
  • 2 tsp sugar
  • 5-10 shallots, peeled
  • ½ inch ginger, peeled

For Paneer Masala

  1. In a pan, add cumin seeds, coriander powder, cloves, black cardamom, black peppercorns, green cardamom, cinnamon stick and dry roast them.
  2. Transfer all the prepared masala to a grinding jar and grind it to get a fine powder.
  3. Keep it aside for future use.

For Marination & Frying

  1. In a mixing bowl, add paneer, degi red chilli powder, turmeric powder, salt and mix it well.
  2. In a pan, heat oil and add paneer and fry on medium flame until crisp.
  3. Transfer it on tissue paper, keep it aside for future use.

For Tempering

  1. In the same pan, add dry red chilli powder, cloves, black peppercorns, cumin seeds and let it splutter.
  2. Add onion and sauté well. Then add ginger garlic paste and sauté.
  3. Now add some red chilli, turmeric and coriander powder and sauté.
  4. Now add tomato puree, salt, mix well and cook for 5 minutes.
  5. Then add prepared paneer masala, fried paneer and mix everything properly.
  6. Remove and transfer it into a serving bowl and garnish it with coriander leaves.

For Sirka Pyaaz

  1. In a pan, add vinegar and give it a boil.
  2. Then add beetroot, bay leaves, salt, shallots, ginger and sugar.
  3. Give it a boil.
  4. Let all of it cool a bit and transfer it into a jar and use it later.

The paneer masala is ready to serve. You can pair it with chapatti, naan and sirka pyaaz.

  1. Firstly, preheat the oven to 325 degrees F.
  2. Grease and flour a standard pan.
  3. Sprinkle the chopped walnuts around the bottom and set aside.
  4. Take a bowl of medium size, and whisk together the flour, cornstarch, baking powder, and salt.
  5. Cream together the butter and granulated sugar until light and fluffy, for about 3 minutes, using an electric mixer on medium speed.
  6. Add the flour mixture and the 3 tablespoons of canola oil, and mix on medium-low speed for almost 1 to 2 minutes, the mixture should look like wet sand.
  7. Add the pudding to it and mix again on medium-low speed until mixed properly.
  8. In a medium bowl, whisk together the eggs, milk, rum, remaining ½ cup canola oil, and vanilla extract.
  9. Add the mixture to the dry ingredients and then beat on medium speed for about 2 to 3 minutes until combined thoroughly, scraping the sides of the bowl as needed.
  10. If the batter is quite thin then it is good, the cake will be nice and moist.
  11. Pour the cake batter into the prepared pan and bake for almost 50 to 60 minutes, or until a tester inserted into the center of the cake comes out clean.
  12. Make the Rum Syrup:
  13. When the cake has about 10 minutes left to bake, start the rum syrup.
  14. Take a saucepan and melt the butter over medium heat.
  15. Once it is melted, stir in the sugar and the water.
  16. Boil for 5 minutes, while stirring constantly.
  17. Turn off the heat and stir in the rum.
  18. Once it is mixed in, return the pan to medium heat for about 30 seconds.
  19. When the cake comes out of the oven, pour about one-third of the rum syrup over the bottom of the cake, immediately.
  20. Pour slowly so it has time to seep into the cake.
  21. Let it sit for 5 minutes. Invert the cake onto a serving platter.
  22. Using a fork, poke holes all over the cake – the top, sides, and around the inside.
  23. Slowly pour the remaining rum syrup over the top of the cake, allowing it to drip down the sides.
  24. Do this very slowly so that the syrup actually seeps into the cake and doesn’t just pool on the bottom of the serving dish.

Rum cakes are the best desserts on Christmas eve. Serve it with a cup of hot chocolate. Leftovers can be kept, tightly wrapped, at room temperature for up to 5 days.

Method

  1. Cut the vetiver root and wash it with water 2-3 times.
  2. Transfer it in a utensil, add 1 litre of water and soak it overnight or for 7-8 hours.
  3. After 8 hours, boil it for 4-5 minutes on a high flame.
  4. Once the root softens, let it cool and strain its water.
  5. Transfer the water into a saucepan and add sugar; mix it well.
  6. Now, keep it on the flame and boil it for 7-8 minutes.
  7. Add citric acid, mix well and cook for 10-11 minutes on high flame until the syrup gets sticky.
  8. Once it gets sticky, turn off the flame and let it cool.
  9. Now add khus essence and green food colour, mix it properly.
  10. Let it cool down, and transfer this syrup into a glass bottle and store it in the refrigerator.

To Use It:

1. In a tall glass, add 2 tbsp khus sharbat and a glass of chilled water.

2. Mix it well.

Khus sharbat is ready to serve. Now don’t worry about summer, only enjoy the cool khus sharbat.

For the dough 

  1. Take a utensil, and add whole wheat flour, gram flour, and ghee.
  2. Now, mix well and form a crumb-like mixture.
  3. Add water according to the requirement and knead the mixture to form a soft and smooth dough.
  4. Cover it using a muslin cloth and set aside for about 20 minutes.
  5. Next, add a little oil to the dough and knead it till it’s absorbed.
  6. For the filling
  7. First, add boiled potatoes, onion, green chilli, fresh coriander, salt according to taste, coriander powder, chilli powder, cumin powder, garam masala, dried fenugreek leaves and amchur powder.
  8. Mix all of them well.
  9. Divide the dough which was prepared into equal portions, and form small balls.
  10. Now, roll them into a flat disc with a rolling pin and put the prepared stuffing in the centre.
  11. Roll into a bag like structure or potli.
  12. Now, remove excess dough and roll it back into a disc.
  13. Heat a Tawa, keep the prepared paratha and roast on both sides for almost 30 seconds from both sides, flip over and brush with ghee/oil, flip over and roast till brown coloured spots start to appear.

Method

  1. In a flat pan, add coconut and dry roast until golden brown. Remove and keep aside for further use.
  2. Now in the same pan, add dry Kashmiri red chillies and coriander seeds, dry roast for 3-4 minutes. Keep aside for further use.
  3. Heat oil in a pan and add sliced onions, ginger, and garlic cloves. Cook until the onion turns light brown.
  4.  Now add sliced tomatoes and cook until tender. Then add water and cool down the mixture.
  5. In a mixer grinder jar, add prepared mixture, roasted red chillies, coriander seeds and coconut. Grind well to form a smooth paste.
  6.  After that, take a pressure cooker and add the sprouted moth beans, salt, turmeric powder and water, mix it and pressure cook for one whistle on high flame. Turn off the flame.
  7. In a kadhai, add some oil and allow it to heat; add mustard seeds, cumin seeds let it splutter. Then add curry leaves, prepared paste and cook until oil is released.
  8. Then add red chilli powder, goda masala and cook for 3-4 minutes.
  9.  Now, add cooked moth beans, water, salt to taste and jaggery. Boil and cook for 10-15 minutes and let the oil rise to the surface.
  10. Turn off the flame and let it cool a bit.

For Plating

  1. Transfer misal in a serving bowl and garnish it with farsan, chopped onion, green chilli, and few lemon drops.
  2. On a nice platter, place this misal bowl and pair it with pav.

  1. Take a pan or kadhai and add some oil in it on medium flame.
  2. Now, add ginger and garlic and sauté until the raw smell goes off.
  3. Next, add the chopped vegetables and saute them all, gently.
  4. Then, add dark soy sauce, sugar, salt according to your taste, and white pepper powder. Saute until the vegetables are half done.
  5. Add Spring onion and corn starch and cook for a few more seconds.
  6. Remove from heat and keep aside to use later.
  7. In a damp cloth, keep the defrosted rolls of the spring sheet.
  8. Take a spoonful of filling in the center, fold the sides, roll it, and seal the end using a slurry of flour and water.
  9. Now, heat oil in a frying pan.
  10. Deep fry the spring rolls on medium-high heat until they turn golden brown.

  1. Initially, rinse the rice well and soak for 15 minutes.
  2. Meanwhile, in a saucepan, add water and let it boil.
  3. Drain the entire water and transfer the soaked rice into the pan and cook for 15 minutes. Make sure you don’t overcook them.
  4. When the rice is fully cooked, turn the flame off and keep it aside for further use.
  5. Take a non-stick pan, add some oil to it and heat it; once the oil gets hot, add mustard seeds, urad dal, and chana dal.
  6. Roast until light brown in colour.
  7. After that, add peanuts, red chilli, curry leaves and ginger. Fry for 10 seconds.

  1. Firstly, preheat the oven to 400° F.
  2. Add oil to a pan and heat it, and add whole garlic. Cook on medium flame.
  3. Meanwhile, coat each side of the seasoned chicken breast with flour and then dip into the scrambled egg mixture. After that, coat both sides with breadcrumbs.
  4. Now, add these chicken breasts into the pan and fry for 5 minutes until golden brown.
  5. While the chicken is cooking in a pan, add oil, garlic, and tomato sauce and cook it until thick.
  6. Now, flip the chicken onto the other side and cook for another 5 minutes until golden brown.

  7. ½ to 1 teaspoon sugar or as required

  9. 3 tablespoon peanut oil or ghee
  10. rock salt (sendha namak) as required

Preparation

  1. Rinse the overnight soaked sabudana and keep it in a bowl.
  2. Now, boil the potatoes, and when warm peel and chop them.
  3. Take a pan and dry roast the peanuts till they turn brown in color, and when cooled make a coarse powder in a mortar-pestle or in a dry grinder.
  4. Mix the coarsely powdered peanuts, salt, and sugar with the sabudana.
  5. Now heat peanut oil or ghee.
  6. Next, fry the cumin till they crackle and get browned.
  7. Then add some green chillies and curry leaves.
  8. Add chopped boiled potato and sauté for a minute.
  9. Finally, add the sabudana.
  10. Keep on often stirring on a low flame for approx. 4 to 6 minutes.
  11. When the sabudana loses its opaqueness and starts becoming translucent, they are cooked.

For the crust

  1. In a food processor add all-purpose flour, salt, and cold cubed butter. Process until the lumps are formed.
  2. Now add cold water and process until dough is formed.
  3. Then transfer the dough on a flat board, pat it into a ball and flatten it into a disk.
  4. After that, wrap in plastic and refrigerate for 30 minutes.

For Filling

  1. In a bowl, add ground cloves, ground ginger, ground cinnamon, mustard powder, thyme, salt, and pepper. Mix well and keep it aside for further use.
  2. Now take a pan, heat olive oil and add chopped onion, celery and garlic. Saute for 4-5 minutes until translucent.
  3. Then add meat and cook for 4-5 minutes until no longer pink.
  4. Now add spice mix and stir. Add stock and let it boil; turn the flame low and simmer for 20-25 minutes, occasionally stirring until thickens.
  5. After that, add the mashed potato and mix well. Cook for 3-4 minutes.
  6. Remove from the heat and let it cool.

For meat pie

  1. Preheat oven to 375*F/190*C.
  2. Sprinkle some dough on a flat board and place the prepared dough.
  3. Now divide it into two parts in the ratio of 2:3.
  4. Then roll out the bigger part to about 11-12 inch in diameter.
  5. Take an 8-9 inch pie pan and transfer it into it.
  6. Then, to transfer it into a pie pan, wrap it around the rolling pin completely and place it on the pie plate.
  7. Unwrap it slowly into a pie plate, mould it gently, and let the dough hang over the edges.
  8. Now fill it with a cooled meat mixture and grease the outer edge of the pastry with the beaten egg.
  9. After that, roll out the second part of the dough to about 10-11 inches.
  10. Cut a hole in the centre and place it on top of the filling. Trim and tuck the excess pie dough into the pan around the edges.
  11. Once it tucked completely and then crimps the edges of the pie dough to make it look presentable.
  12. After that brush, it with the egg wash and bake for 55-60 minutes until it turns golden.
  13. After 30 mins, add a pie crust shield or aluminium foil on top of the pie.
  14. Remove the dish from the oven. Allow the pie to cool down for at least 1 hr before serving.
