Pani puri should be considered as the national food of India, and I am sure no one will disagree with it. The go-to street food for people of all ages.

Pani puri or gol gappa is the most popular Indian street food where crispy puri is filled with masala filling of aloo or chana and tangy water and chutney. Some people prefer sweet chutney and some spicy; people prefer different taste in water too; it can be sweet, tangy, spicy or a mix of both sweet and spicy.

Ingredients For Making Pani Puri

For Puri 

  • 4 cups Semolina
  • 1/2 cup all-purpose flour
  • Salt to taste4
  • Warm water
  • Oil for frying

For Water

  • 2 cups Mint leaves
  • 1 cup Coriander leaves
  • 1-inch ginger, peeled, sliced
  • 2-3 green Chillies, broken
  • ¼ cup Jaggery
  • 1 cup Ice cubes
  • Salt to taste
  • 2 cup Water
  • 1 tsp Rock salt
  • 1 tbsp Roasted Cumin powder
  • 1½ tsp Chaat masala
  • ⅓ cup Tamarind pulp
  • ½ cup salted Boondi

For Pani Puri Potato Masala stuffing 

  • Potato, boiled – 1 large
  • 1 tsp roasted Cumin powder,
  • 1 tsp Rock salt
  • ½ cup Green Moong, boiled
  • 1 tsp Chaat masala
  • 1 tsp Red Chilli powder

For Serving 

  • Tamarind chutney
  • Sev
  • Salted Boondi
  • Ragda
  • Green Moong
  • Puri
  • Pani

Preparation

For Puri 

  1. Take a parat, and add semolina, all-purpose flour, salt to taste and warm water as required.
  2. Knead into a stiff dough using warm water as required. 
  3. Cover it with a wet muslin cloth and keep it aside to rest for about 25-30 minutes. 
  4. Roll out the dough and cut it with the help of a round cutter. 
  5. Let it rest again for 3-5 mins. 
  6. Deep fry the puris till they turn golden brown. 

For Water

  1. In a bowl, add mint leaves, ginger, coriander leaves, green chilli, jaggery, ice cubes and salt to taste.
  2. Pour this into a mixer and grind it into a smooth paste, add little water while grinding it.
  3. Transfer this into a bowl, add black salt, cumin powder and water and mix very well and strain it in a deep container. 
  4. Add tamarind pulp and salted boondi and mix properly. 

For  potato Masala 

  1. In a bowl. Add boil potato and mash it well, add cumin powder, black salt, green moong, chaat masala and red chilli powder mix everything evenly. 

Serve it with puri, ragda, pani, green moong, tamarind chutney, and sev.
