Ingredients

Black Chickpeas

For Tamarind Chutney

  • 2 cups of water
  • ½ cup tamarind
  • 2/3 cup jaggery
  • 1-inch ginger
  • 1 tsp degi red chilli powder
  • Salt to taste

For Tempering Chutney

  • 1 tbsp sesame oil
  • ½ tsp cumin seeds
  • ½ tsp fennel seeds
  • 2-3 dry red chillies, broken in half

For Dough

  • 2/3 cup Rava
  • ½ cup, refined flour
  • Salt to taste
  • ¼ tsp baking soda
  • ½ tsp turmeric water

For Stuffing

  • 1 tsp degi red chilli powder
  • ½ cup gram flour
  • Salt to taste
  • ½ tsp ghee
  • Water
  • ¼ tsp baking soda

For Chaat Masala

  • 1 tbsp cumin seeds
  • ½ tbsp coriander seeds
  • 1 tbsp fennel seeds
  • ½ tsp salt
  • 1 tbsp black peppercorns
  • 1 tsp degi red chilli powder
  • ¼ tsp amchur powder

For Filling

  • 1 large potato, boiled & cubed
  • 2 fresh green chillies, chopped
  • 1 small onion, chopped
  • ½ boiled brown chana
  • ½ medium lemon juice
  • Few coriander leaves, chopped
  • ½ tsp black pepper powder
  • Black salt to taste

Other Ingredients

  • Oil for frying
  • Curd
  • Tamarind chutney
  • Green chutney
  • Prepared chaat masala
  • Fresh coriander leaves
  • Pomegranate pearls
  • Sev

For Tamarind Chutney

  1. In a saucepan add, water, tamarind and jaggery and boil it for 6-8 minutes on medium flame.
  2. Now add degi red chilli powder and salt and boil again for 5-6 minutes on medium flame.
  3. Strain the mixture properly and pour the strained mixture into the same saucepan and place it on heat.
  4. Meanwhile, take some sesame oil in a pan and heat it and add cumin seeds, fennel seeds, dry red chillies and cook for few seconds.
  5. Pour this tempering on the boiling tamarind mixture and continue cooking until the mixture turns thick like chutney.
  6. Then remove and keep it aside for further use.

For Assembling Raj Kachori

  1. To assemble raj kachori, you need to place the fried kachori on a serving plate and make a hole with your finger in the centre of the kachori.
  2. Now add a big spoonful of filling, green chutney, tamarind chutney, curd chaat masala and repeat this process one more time.
  3. Then sprinkle some sev and garnish it with fresh coriander leaves and pomegranate pearls and serve immediately.
