The word sheer khurma is derived from Sanskrit and the Persian language. The word sheer means milk in Sanskrit and khurma means dates in Persian. Ingredients

Vermicelli

  • ½ cup of water
  • 1 tin condensed milk
  • 1-litre full-fat milk
  • 7-8 dates, seedless and chopped
  • 3-4 green cardamoms, crushed
  • ½ cup sugar
  • ¼ cup ghee
  • 2 tbsp chirongi
  • ¼ cup golden raisins
  • 7-8 pistachios, sliced
  • 8-10 almonds, sliced
  • 8-10 cashews, chopped
  • 1 cup whole wheat vermicelli, crushed

Method

  1. In a pressure cooker, add water and immerse a tin of condensed milk in it.
  2. Cover with lid and cook for two whistles on medium flame.
  3. Heat milk in a deep-bottomed heavy wok and add dates.
  4. Cook it till it changes its colour and reduces.
  5. Now add crushed cardamom, cook on simmer for 3-4 minutes and add sugar.
  6. Stir until the sugar begins to melt.
  7. Remove condensed milk from the cooker and add the cooked condensed milk to the boiling milk.
  8. Mix well and cook it until it gets thick consistency.
  9. Take another pan, add 2 tbsp ghee and heat it.
  10. Add chirongi, raisins, pistachios, almonds and cashews and roast till fragrant.
  11. Now add vermicelli and roast it until brown.
  12. Then add desiccated coconut and roast till fragrant.
  13. Add this dry fruit mixture to the milk and mix well.
  14. Cook it until one boil and thickens.
  15. Transfer into serving bowls and garnish with dry fruits and saffron.
