Ingredients

Tomato Puree

  • 1 large onion, sliced
  • 3 medium tomatoes, diced
  • 2 medium capsicum, diced
  • 2 garlic cloves, chopped
  • 1 tbsp oil
  • ½ tsp turmeric powder
  • 1 tbsp degi red chilli powder
  • Salt to taste
  • ¼ tsp sugar
  • 1 cup fresh tomato puree
  • Water
  • ½ cup grated cheese
  • 3-4 eggs
  • ½ tsp olive oil

 

For Garnish

  • Fresh coriander leaves
  • Spring onion, chopped
  • A pinch of degi red chilli powder

 

Method

  1. Heat oil in a pan and add garlic, ginger and sauté it well.
  2. Now add onion and sauté it well.
  3. Then add capsicum and toss everything.
  4. Add degi red chilli powder, turmeric powder, tomatoes, and green chillies and mix it properly.
  5. Then add salt and sugar to it and mix it well.
  6. After it adds fresh tomato puree, mix it and add little water and cook for 5 minutes.
  7. Now, with the help of a wooden spoon, make pockets in the sauce.
  8. Then add grated cheese into each pocket and crack the egg into each pocket.
  9. Cover the pan and cook for 5-8 minutes until it is cooked properly.
  10. Drizzle some olive oil on top of it.
  11. Transfer it into a nice platter and garnish it with fresh coriander leaves, spring onion and sprinkle some red chilli powder.
