  1. Firstly, in a glass jar add dry yeast, sugar and water. Mix and let it activate for 5-10 minutes, until bubbly and frothy.
  2. Secondly, add psyllium husk and water in a bowl. Mix and keep it aside for further use.
  3. Now, in a mixing bowl add brown rice flour, buckwheat flour, potato starch, and salt. Mix well.
  4. Now make a well in the centre and pour the prepared yeast mixture, psyllium gel and apple cider vinegar.
  5. Mix well and knead soft dough.
  6. After that, grease the dough with oil and knead it again with the folding method.
  7. Now grease the bowl with oil and place the kneaded dough to it. Cover with a damp cloth and let it rest for 1 hour.
  8. After 1 hour, knead the dough again and transfer it into a flour-dusted bowl.
  9. Now, cover it with a damp cloth and let it rest again for 1 hour.
  10. Meanwhile, preheat the oven to 250*C for 30-45 minutes.
  11. After 1 hour, line the baking tray with butter paper and transfer the prepared dough into it.
  12. Then, set the baking tray inside the oven and bake at 250*C for 20 minutes.
  13. After 20 minutes, reduce the temperature to 230*C and bake again for 40-50 minutes.
  14. After 40-50 minutes. Take out the bread and let it cool a bit.

For Masala

  1. Take a bowl and add turmeric powder, ashwagandha powder, pipli powder, and mix it well.

For Kachori Filling Paste

  1. In a bowl mix moong dal, urad dal, prepared masala, ginger, green chillies, fennel seeds, carom seeds, salt, and make a coarse paste by grinding them in a grinder.
  2. Now, add citric acid and mix well.

For Potato Sabzi

  1. First, we will cut the potatoes into cubes and then deep fry them in hot oil until they turn golden brown in color and crispy.
  2. Now in a pan heat oil and add crushed fennel seeds & coriander seeds, ginger, green chilies, and sauté for a minute.
  3. Next, add the fried potatoes and toss them properly.
  4. Then add salt and masala and cook for a minute.
  5. Finally, mix dry mango powder.
  6. For the Kachori Dough
  7. Take a bowl and add maida, oil, carom seeds, salt, and mix it well until it looks like bread crumbs consistency.
  8. Now add chilled water and knead it into a semi-soft dough.

For Parang curry paste

  1. Firstly, soak the dried chillies in hot water for 10-15 minutes.
  2. Then remove the chillies from the water and reserve the water.
  3. Roughly chop the soaked chillies and transfer them into a food processor jar.

  • ½ tsp Red Chilli Powder

For Dhokli 

  1. Mix whole wheat flour, gram flour, turmeric powder, red chilli powder, asafoetida, salt, oil, water, and knead it into a soft dough.
  2. Keep aside for 5-10 minutes.
  3. Take out a little portion of the dough and roll it into a roti, and half cook it on a flat pan. And then cut it in a diamond shape; you may also make it into a round shape like a coin.
  4. Put it aside.

For Tempering 

  1. Take a pan, add ghee, mustard seeds, fenugreek seeds, curry leaves, dry red chilli, cloves, cinnamon stick, asafoetida, red chilli powder, and sauté it for a minute or two.

For Dal 

  1. Take a Kadhai, and add toor dal, ghee, salt, turmeric powder, red chilli powder, bay leaf, and mix everything properly.
  2. Now, cover it and cook on medium heat for about 20-25 mins or until it goes soft.
  3. Next, add the cut roti into it and also add kokum, jaggery to it.
  4. Let it boil for almost 8-10 minutes.
  5. Then pour the tempering over it and boil it for a minute.

Serve hot. For making it taste even better, add a tablespoon of ghee and lemon to it.

METHOD

For dough

  1. In a mixing bowl, add refined flour, salt, sugar, baking powder and baking soda. Mix well
  2. Add ghee and mix properly.
  3. Now add curd, mix well.
  4. Add little chilled water, mix it well and knead the dough.
  5. Pour a little amount of ghee and mix well, knead the semi-soft dough.
  6. Cover the dough with a wet cloth and keep it aside to set.

 

For filling

  1. In a pan, add cumin seeds, coriander seeds and dry roast them, crush them coarsely and keep them aside.
  2. In a mixing bowl, add onion, green chilli, fresh coriander leaves, add the crushed cumin seeds, coriander seeds, mango powder, and mix well.
  3. Now add boiled and mashed potato and mix well until the mixture gets a creamy texture.
  4. Add salt and mix well. Keep aside for future use.

 

For saltwater

In a bowl add water, salt and mix well.

 

For Amritsari Kulcha

  1. Pre-heat the cooker on high flame.
  2. Make medium size ball from the dough, add the stuffing in the centre, bring the edges together and join them at the centre.
  3. Grease the rolling board with ghee and place the dough ball on it, and roll to a large disc about 5-6 inches in diameter.
  4. Apply some ghee, kulcha masala, coriander leaves and gently press the Kulcha.
  5. Sprinkle saltwater in the pre-heated cooker so that the Kulcha sticks to it.
  6. Gently place the Kulcha inside the cooker wall. Place the cooker upside down over the flame.
  7. For the smoky aroma, turn the cooker and place hot coal inside it and pour ghee over it.
  8. Once the Kulcha is cooked from both sides, place it on the rack and apply some ghee.

Serve the Amritsari Kulcha hot with chole, lemon pickle, green chutney and curd.

Method For Making Aloo Baingan Ki Sabji

  1. In a pan add sliced potato and fry half until golden brown in colour. Transfer it to a plate and keep it aside for future use.
  2. Now add sliced eggplants to the same pan and fry for 2-3 minutes on medium flame. Transfer it to a plate and keep it aside.
  3. Then add 3 tbsp oil to a pan. Add cumin seeds, cinnamon stick, black cardamom and bay leaves, roast it.
  4. Now add crushed ginger and garlic and mix well.
  5. Add chopped green chilli, onion to it and sauté it.
  6. Cook for 4-5 minutes on medium flame until onions soften.
  7. After that add tomatoes and cook for 2-3 minutes on medium flame.
  8. Add turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder and salt, mix it well.
  9. Cover it and cook for 3-4 minutes on low flame.
  10. Remove the lid and cook it for 1 more minute. Keep stirring.
  11. Now add fried potato and eggplants and mix it well.
  12. Cover it and cook for 15 minutes on a low flame. Keep stirring in between.
  13. Remove the lid and mix it well.
  14. Add ¼ cup water for gravy, cover and cook for 2-3 minutes on low flame.
  15. Turn off the flame and transfer this dish to a serving bowl.

  1. In a pan, add oil and baby corns, saute for 1 minute. Remove and keep aside for further use.
  2. Take the same pan and, add oil, bay leaf, cinnamon stick, cardamom pods, cumin seeds, and saute until fragrant.
  3. Now add onion and ginger garlic paste. Saute well.
  4. Then, add tomato pulp, stir—cover and cook for 15 minutes.
  5. After 15 minutes, add turmeric powder, chili powder, coriander powder, cumin powder, and salt. Saute well on low flame until it starts releasing oil.
  6. Now, add water, cashew paste, and mix everything properly.
  7. Then, add roasted baby corns and stir well.
  8. Cover and cook for 10 minutes.

For the Base Gravy 

  1.  Take a heavy bottom pan, and add ½ cup of water. 
  2. Now, add tomatoes, onions, garlic, ginger, mirch and all the spices. 
  3. Mix them all really well. 
  4. Next, add 1½ tsp butter, salt and mix properly.
  5. Cover it and then cook for 15 minutes. 
  6. Once the tomatoes are soft, blend the gravy, with a hand blender, till it becomes smooth. 
  7. Strain the gravy through a strainer. 

For Making Butter Chicken 

  1. Take a pan and add butter. Allow it to melt properly. 
  2. Now, add some red chilli powder and coriander powder and cook for a minute or two.
  3. Pour prepared gravy, mix well and cook for about 2-3 minutes. 
  4. Next, add fresh cream, honey, shredded tandoori chicken to it and mix well.
  5. Then cook for another 3-4 minutes. 
  6. Add kewra water, dried fenugreek leaves and then cook for about 2 minutes. 
  7. Take a small bowl, and add burnt charcoal, then place it in the middle of the gravy. 
  8. Pour ghee over charcoal and immediately cover it with a lid; keep it for almost 2-3 minutes for the smoky flavour. 
  9. Once done, remove the charcoal bowl. 
  10. Put the butter chicken in a serving bowl. 

Garnish it with fresh cream and coriander sprig, and Serve hot with roti or rice.

  • ½ teaspoon cardamom powder
  • ¼ teaspoon nutmeg powder

The Poli – Outer Covering

  • 1.5 cups whole wheat flour 
  •  ½ cup all-purpose flour
  • 4 tablespoon oil or ghee 
  • ½ teaspoon salt
  • ¼ teaspoon turmeric powder 
  • Add water as per the requirement to knead a smooth dough
  • Add oil or ghee as required for roasting the Puran Poli

Preparing Puran

  1. First of all, rinse the chana dal very well. 
  2. Take a pressure cooker, and cook the chana dal for 6 to 7 whistles. 
  3. Allow the pressure to settle down on its own, strain the cooked dal. 
  4. In a pan heat ghee and add ginger powder, cardamom powder, nutmeg powder, and fennel powder. 
  5. Fry for some time on low heat.
  6. Now, add the chana dal and jaggery. 
  7. Stir it and let the Puran mixture cook on a low flame till it becomes dry.
  8. Once the stuffing is dry and thick, switch off the flame.
  9. Let it cool and then mash the mixture with a masher. 
  10. Keep aside.

Preparing The Poli Dough

  1. Meanwhile take whole wheat flour, all-purpose flour, and salt in a bowl and mix well.
  2. Now, add a little bit of water and ghee and mix it.
  3. Add water as needed and knead the dough smooth. 
  4. Cover and keep it aside for about 15-20 minutes.

Making Puran Poli

  1. Take a ball from the smooth dough prepared.
  2. Roll it round and place a portion of Puran mixture in the center of the rolled dough.
  3. Join all the edges together at the center. 
  4. Sprinkle some flour and start rolling the dough.
  5. Make a medium or large circle.
  6. Now, on a heated tawa, spread some ghee. 
  7. Put the rolled poli/dough circle on the Tawa.
  8. When one side gets browned, turn over and cook the other side till you see some brown spots.
  9. Once the second side gets browned, then turn over and apply some ghee.
  10. The poli should be cooked well with brown spots and golden.

Serve the Puran poli warm or at room temperature with milk, or ghee.
