  1. Firstly, rinse shrimp well, then peel and devein them. Place all heads and shells into a stockpot.
  2. Cook it on a medium flame and saute shrimp shells until the stuff that sticks to the pot starts to brown.
  3. Now add water and scrape off the browned bits and simmer for 15-20 minutes. Then remove shells with the help of a skimmer.
  4. Now bring the stock to simmer the flame and add lemongrass, kaffir lime leaves, galangal and chillies. Simmer for 5 minutes and stir well.
  5. After that, remove herbs from the stock with a skimmer.
  6. Then add evaporated milk and straw or oyster mushroom. Let it cook for 1-2 minutes until mushrooms are tender.
  7. Now add chilli paste and fish paste. Stir well so that the chilli sauce dissolves completely.
  8. After that, add shrimp meat and cook for 30 seconds until shrimps are done.
  9. After the shrimps are well cooked in the soup, turn the flame off and let the soup cool slightly for a minute.
  10. Then add lime juice and keep stirring.
  11. Add sawtooth coriander and stir.

  1. Firstly, take a large bowl and start adding chicken cubes, onion cubes, chopped garlic, cumin powder, red chili powder, cinnamon powder, coriander powder, salt, tomato paste, lemon juice, oil, and yogurt. Now mix and marinate well. Cover the marinated chicken and keep it aside for 2 hours.

  • 7-8 dry Kashmiri red chillies

Method

  1. In a flat pan, add coconut and dry roast until golden brown. Remove and keep aside for further use.
  2. Now in the same pan, add dry Kashmiri red chillies and coriander seeds, dry roast for 3-4 minutes. Keep aside for further use.
  3. Heat oil in a pan and add sliced onions, ginger, and garlic cloves. Cook until the onion turns light brown.
  4.  Now add sliced tomatoes and cook until tender. Then add water and cool down the mixture.
  5. In a mixer grinder jar, add prepared mixture, roasted red chillies, coriander seeds and coconut. Grind well to form a smooth paste.
  6.  After that, take a pressure cooker and add the sprouted moth beans, salt, turmeric powder and water, mix it and pressure cook for one whistle on high flame. Turn off the flame.
  7. In a kadhai, add some oil and allow it to heat; add mustard seeds, cumin seeds let it splutter. Then add curry leaves, prepared paste and cook until oil is released.
  8. Then add red chilli powder, goda masala and cook for 3-4 minutes.
  9.  Now, add cooked moth beans, water, salt to taste and jaggery. Boil and cook for 10-15 minutes and let the oil rise to the surface.
  10. Turn off the flame and let it cool a bit.

For Plating

  1. Transfer misal in a serving bowl and garnish it with farsan, chopped onion, green chilli, and few lemon drops.
  2. On a nice platter, place this misal bowl and pair it with pav.

For Paneer Masala

  1. In a pan, add cumin seeds, coriander powder, cloves, black cardamom, black peppercorns, green cardamom, cinnamon stick and dry roast them.
  2. Transfer all the prepared masala to a grinding jar and grind it to get a fine powder.
  3. Keep it aside for future use.

For Marination & Frying

  1. In a mixing bowl, add paneer, degi red chilli powder, turmeric powder, salt and mix it well.
  2. In a pan, heat oil and add paneer and fry on medium flame until crisp.
  3. Transfer it on tissue paper, keep it aside for future use.

For Tempering

  1. In the same pan, add dry red chilli powder, cloves, black peppercorns, cumin seeds and let it splutter.
  2. Add onion and sauté well. Then add ginger garlic paste and sauté.
  3. Now add some red chilli, turmeric and coriander powder and sauté.
  4. Now add tomato puree, salt, mix well and cook for 5 minutes.
  5. Then add prepared paneer masala, fried paneer and mix everything properly.
  6. Remove and transfer it into a serving bowl and garnish it with coriander leaves.

For Sirka Pyaaz

  1. In a pan, add vinegar and give it a boil.
  2. Then add beetroot, bay leaves, salt, shallots, ginger and sugar.
  3. Give it a boil.
  4. Let all of it cool a bit and transfer it into a jar and use it later.

The paneer masala is ready to serve. You can pair it with chapatti, naan and sirka pyaaz.

For Kachori Dough 

  1. In a bowl add refined flour, carom seeds, ghee, salt, and mix everything once properly. 
  2. Now add water and knead a semi-hard dough and keep aside for 10-15 minutes to rest. 

For Powder Masala 

  1. In a pan add coriander seeds, cumin seeds, fennel seeds and roast them lightly. 
  2. Remove and let them cool. 
  3. Once cooled, grind it into a coarse powder. 
  4. Keep aside for further use.

For Filling 

  1. Take a pan and heat oil, ghee to it.
  2. Add the prepared masala, asafoetida, green chilies, ginger, and onion.
  3. Saute until it turns translucent or soft.

  1. Pour oil to heat in a kadhai on low to medium heat.
  2. Now take a small portion of the dough and spread it using your hand and keep it thick in central and thin at the edges. 
  3. Next, add the spoonful of filling in it and close it up and roll lightly with a rolling pin.
  4. Then deep fry them in medium hot oil until golden brown in color and crispy in texture.

For dough
