  • ¼ cup kidney beans, boiled
  • ¼ cup black-eyed beans, boiled
  • ½ cup tomato puree
  • 3 tbsp prepared Mexican masala
  • 2 cups cooked rice
  • 2 tbsp coriander leaves, finely chopped
  • Salt to taste

For Mexican Masala

  1. In a pan add, cumin seeds, coriander seeds and roast them well
  2. Transfer into the grinder and add oregano and salt to it and grind into a fine powder.
  3. Transfer it into a mixing bowl, add red chilli powder and mix well; keep aside for future use.

For Salsa

  1. In a grinder, jar and add tomatoes and grind into a puree.
  2. Transfer 2/3rd puree into a bowl and keep 1/3rd for future use.
  3. Add onion, green chilli, coriander leaves with stem, salt and lemon juice, mix it well.

For Nachos

  1. In a bowl, add wheat flour, cornflour, prepared Mexican masala and knead it well.
  2. Take a medium portion of dough, roll it thin using a rolling pin.
  3. Transfer it to the griddle and half cook it from both sides.
  4. Now roll it again on the rolling board so that it cannot raise during frying and cook it again.
  5. Cut it into stripes and then in a triangle shape.
  6. Take a pan and heat oil for deep frying.
  7. Add these triangles in medium hot oil until golden brown and crispy.
  8. Remove on tissue paper.

For Mexican Rice

  1. In a pan to saute the veggies, add oil and heat it.
  2. Add chopped garlic, onion, corn kernels, carrot, capsicum, green chilli, and sauté well.
  3. Now add boiled kidney beans and black-eyed beans and sauté for 2 minutes. Keep the vegetable chunky
  4. Add remaining 1/3rd tomato puree and prepared Mexican masala, mix well.
  5. Then add cooked rice and mix it properly.
  6. At the end, add chopped tomato, salt and coriander leaves and toss it well.
  7. Transfer the Mexican rice to a serving plate.
  8. Garnish it with some prepared salsa on top, fried crushed nachos and grated cheese and on top with a coriander sprig.

  1. Rinse rice thoroughly and then place it in a pressure cooker with 3 cups of water and salt. Pressure cook the rice until very soft or till 2 to 3 whistles on high heat then lower the heat and cook for about 2 to 3 minutes more.
  2. Once the rice is cooked, mash it a little using a masher. 
  3. Transfer rice to a large bowl and let it cool down completely.
  4. Once the rice has cooled completely, add in the whisked yogurt and milk and combine well.
  5. Now, add in the grated carrot, chopped cilantro, and green chili and mix really well.

Now for the tempering/tadka

  1. Heat oil in a small pan on low to medium heat.
  2. Once the oil is hot, add the mustard seeds and let them stutter.
  3. Now, add the urad dal and cook until it starts changing color. 
  4. Then, add the ginger, curry leaves, and dried red chilies. 
  5. Cook until the curry leaves becomes crispy.
  6. Pour the tadka into the bowl of curd rice and mix.
  7. Cover and refrigerate the curd rice for a few hours until chilled. 

Then top with pomegranate (optional) and serve with achar and papadum.

Method Of Making Sarso Ka Saag

1. In a pan add mustard leaves, amaranth leaves, chickpea leaves, chopped turnips, ginger, garlic, white butter, green chilli, salt, red chilli powder, turmeric powder and mix well.

2. Add water and cook for about 2 hours on low flame.

3. After 2 hours, remove it from the flame and churn well with the churner.

For Tempering

1.Take a heavy bottom pan add to it some ghee and heat it, add red chilli, cumin seeds and let it splutter.

2. Now add garlic and sauté well, until they turn translucent.

3. Add prepared saag and mix well.

4. Bask butter on top of it.

Method

  1. In a pressure cooker, add water, dry red chilies, ginger, coriander roots, black cardamom, cinnamon, black peppercorns and coriander seeds, salt, sugar, butter, and corn on the cob.
  2. Now cover the lid of the pressure cooker and give it 1-2 whistles.
  3. Turn off the flame, let it cool.
  4. Remove and keep aside for future use.

South Indian Style Corn Chaat

Ingredients:

For Gun Powder

  • 1 tsp oil1/2 cumin seeds
  • 1 tsp coriander seeds
  • 3-4 dry red chillies
  • 1 tbsp chana dal
  • 1 twig curry leaves
  • Salt to taste
  • 1 tbsp urad dal

Other Ingredients

  • 1 corn on the cob
  • ¼ cup chopped coconut
  • 1 twig of curry leaves, chopped
  • 2-3 tbsp remaining water from the corn

Method

For Gun Powder

  • Take a pan, add oil, add some cumin seeds, coriander seeds, dry red chilies, chana dal, urad dal, curry leaves, and roast until golden brown.
  • Add salt and mix it well
  • Let it cool down a bit and add it to the blender jar, blend into a powder.
  • Keep aside for future use.

To prepare

  • Remove corn kernels from the cob and keep them aside for future use.
  • In a pan, add corn kernels, coconut, curry leaves, some remaining water from the corn, butter, gun powder.
  • Toss it properly and transfer it to a bowl.

Italian Style Corn Chaat

  • 2-3 tbsp remaining water from the corn
  •  1/2 tsp dried oregano
  • 1 heaped tbsp butter
  • ½ tsp chilli flakes
  •  1 corn on the cob
  • ½ tsp freshly ground black pepper

Method

1. Remove corn kernels from the cob and keep them aside for future use.

2. Heat a pan and add remaining water from the corn, corn kernels, butter, chilli flakes, dried and fresh oregano, ground black pepper.

3. Sauté it and transfer it into a bowl.

  1. Firstly, in a saucepan, add water and roasted vermicelli. Boil until vermicelli softens.
  2. Once it is softened, remove and drain. Transfer the vermicelli into a bowl and keep it aside till in use.
  3. Then, heat butter in a pan and add ginger paste, chopped green chillies. Reduce the flame and saute.
  4. Now, add chopped carrots and baby corns. Stir and cook well for a minute on high flame.
  5. After that, add chopped cauliflower, capsicum and green peas. Cook for 3 minutes.

Method

Homemade Daulat Ki Chaat

  1. In the first step, take a pan and add milk to it and boil it. Keep stirring in between, and after one boil, turn off the flame and let it cool to room temperature.
  2. After that, transfer this milk to a bowl and add malai and cream of tartar and whisk it properly.
  3. Keep this mixture inside the refrigerator for 8-10 hours.
  4. After 10 hours, take out the milk and add few ice cubes to it and beat it with an electric blender until frothy.
  5. Now collect the foam and transfer it into a bowl and repeat this process until the mixture remains half.
  6. Then add soaked saffron into the remaining mixture and beat until it is frothy and collect the foam.
  7. Transfer this foam into another bowl and repeat the process until the mixture gets over.
  8. Keep both the bowls inside the refrigerator for 10-15 minutes.
  9. Now take a mortar and add small pieces of peanut chikki into it. Coarsely crush it and keep it aside for garnish.
  10. Now take out both the bowls from the refrigerator.
  11. Take a bowl and add white foam first and secondly add saffron foam on top of it.
  12. Now sprinkle castor sugar and garnish with grated mawa, slivered pistachios, crushed peanut chikki.
  13.  Crush the dried rose petals and sprinkle over them and lastly, garnish with saffron strands and silver warq.

For Stuffing

  • 2 tsp oil
  • 1/2 tsp cumin seeds
  • 1/2 medium onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 tsp ginger garlic paste
  • 1/2 cup peas
  • 1/2 cup beetroot, finely chopped
  • 1 carrot, finely chopped
  • 5 beans, finely chopped
  • 1/2 tsp turmeric powder
  • 1/2 tsp Kashmiri red chilli powder
  • salt to taste
  • 1/2 tsp garam masala
  • 1/2 tsp dry mango powder
  • 2 medium potato, boiled, peeled & mashed
  • 2 tbsp coriander leaves
  • 1/4 cup refined flour for dusting
  • 2 tbsp butter

Method

For Dough

  1. In a large mixing bowl and add refined flour, butter, and salt to it. Crumble and mix well.
  2. Now, add cold water and knead a soft dough.
  3. Then, cover it with a wet cloth and let it rest for 15 minutes in the fridge.

For Butter Dough

  1. In a bowl, grate cold butter and add lemon juice, salt, and refined flour.
  2. Now, mix properly until combined well.
  3. Knead the dough and allow it to rest for 15 minutes.

For Pastry Sheets

  1. To make pastry sheets, take the firstly prepared dough and knead again.
  2. Now, place on a flat board and roll to a half cm thick sheet with a rolling pin.
  3. Dust refined flour and roll.
  4. After that, take the butter dough and place it in the centre of the rolled sheet.
  5. Wrap it from all four sides and place it in a tray.
  6. Now, cover it with cling wrap and let it rest for 15 minutes in the fridge.
  7. After 15 mins, place the dough on a flat board and dust some refined flour.
  8. Then, press and flatten it with the rolling pin.
  9. Dust flour and roll gently.
  10. Now, dust off the excess flour and fold it into two folds.
  11. Then, wrap it with cling wrap and let it rest for 15 minutes in the refrigerator.
  12. Repeat the same process six times.

For Stuffing

  1. Firstly, in a pan, add oil and cumin seeds. Let it splutter.
  2. Now, add chopped onion, ginger garlic paste and green chillies. Saute until onions turn translucent.
  3. Then, add chopped carrot, beans, beetroot, and peas. Saute well for 2 minutes.
  4. After that, cover and simmer for 10 minutes until cooked well.
  5. After 10 minutes, add turmeric powder, red chilli powder, garam masala, and dry mango powder. Mix and saute well for 1 minute until aromatic.
  6. Now, add boiled and mashed potatoes and mix well.
  7. Lastly, add coriander leaves and mix well. Keep aside till in use.

For Veg Puffs

  1. Spread the pastry sheet and cut it in half. Keep the half sheet in the fridge for later use.
  2. Roll the half sheet in a square shape and cut the sides.
  3. Now cut the 6 rectangle pieces and add prepared stuffing in the centre of each piece.
  4. Fold each sheet half and seal the edges.
  5. After that, place the puffs into the butter paper-lined baking tray.
  6. Grease the puffs with butter and set the tray inside the oven.

Seasoning flour 

  • 1/2 cup Refine flour (Maida) 
  • 1 tsp White pepper powder 
  • 2 tbsp Corn starch 
  • Salt to taste 
  • Oil for frying 

Preparation

  1. First of all, take 10-12 chicken wings and trim the bones and pull the meat towards down so that you can get a pocket. 
  2. Take a mixing bowl to add Bread crumbs, red chilli paste, Processed cheese and mix them really well.  
  3. Fill the chicken wings pocket with the stuffing in it. 
  4. Now, take a mixing bowl and add egg, ginger garlic paste, white pepper powder and mix it properly and marinate the stuffed chicken. 
  5. Let the marinated chicken rest for about 10 to 15 minutes. 
  6. To the same marinate mixture add corn starch, refined flour, red chilli powder, Garam masala, salt according to your taste and oil.
  7. Mix it all really well and make a batter out of it. 

To prepare a seasoning flour. 

  1. In a mixing bowl, add Refine flour, white pepper, corn starch and salt to taste and mix well. 
  2. At this stage season, the stuffed chicken in the seasoned flour first and then into the batter.
  3. Take a deep kadhai for frying. 

Once the oil is heated on medium flame, fry the chicken till it gets golden brown in colour. Serve hot with chilli sauce.
