  1. Firstly, in a saucepan, add water and roasted vermicelli. Boil until vermicelli softens.
  2. Once it is softened, remove and drain. Transfer the vermicelli into a bowl and keep it aside till in use.
  3. Then, heat butter in a pan and add ginger paste, chopped green chillies. Reduce the flame and saute.
  4. Now, add chopped carrots and baby corns. Stir and cook well for a minute on high flame.
  5. After that, add chopped cauliflower, capsicum and green peas. Cook for 3 minutes.
  6. Furthermore, add chopped tomatoes and mix and cook well.
  7. Then, add pasta sauce, chaat masala, and salt. Stir well until veggies are cooked.

  1. Firstly, in a bowl add all-purpose flour, baking powder, and salt. Mix well.
  2. Now, take another bowl and add yoghurt, 1 cup sugar, lemon zest, and vanilla essence. Whisk well.
  3. After that, pour the dry ingredients into the wet ingredient bowl and slowly whisk, make sure there are no lumps.
  4. Then, add vegetable oil and whisk. Keep aside.
  5. Now, grease the loaf pan with oil or butter and line the bottom with parchment paper. Then grease again and dust some flour.
  6. Then add the prepared batter into it and spread well. Tap to remove air bubbles.
  7. Keep the loaf pan inside the 350*F preheated oven. Let it bake for 50 minutes.
  8. Meanwhile, in a pan add 1/3 cup lemon juice and 1/3 cup sugar. Stir well and cook until the sugar dissolves and the mixture is clear. Keep aside till in use.

  1. Take a bowl and add chilled water, oil, lemon juice, powdered sugar, vanilla essence to it and mix everything properly.

For Dry Ingredients

  1. In another bowl, add salt, cocoa powder, maida, baking soda and mix everything properly.

For Dusting Mould 

  1. Take any desired mould, apply butter to it, and keep it in the freezer to set the butter.
  2. Now remove it and dust some maida on each side of the mould properly and again set it in the freezer until further use.

For Choco Lava Cake

  1. Take the dry ingredients and them into the wet ingredients and combine them properly.
  2. Once it’s mixed properly, take out the mould from the freezer and add 2-3 spoons of batter.
  3. Now add a cube of dark chocolate to it and again add 1-2 spoons of butter.
  4. Repeat this same process with all other moulds.
  5. Freeze the filled mould for a minute.
  6. Now remove and put them in a hot steamer.
  7. Steam it for 4-5 minutes.
  8. After that, remove the cake from the mould gently and serve warm.

  2. Take another bowl and add whipping cream to it; using a hand blender, whip the cream till you observe a soft peak. This might take up to 8-12 minutes. Add vanilla extract to it and again whip it to mix it well.
  3. Using a spatula, keep turning and mixing the melted chocolate, and add whipping cream to it until it is fully mixed.

  1. In a pan add sliced potato and fry half until golden brown in colour. Transfer it to a plate and keep it aside for future use.
  2. Now add sliced eggplants to the same pan and fry for 2-3 minutes on medium flame. Transfer it to a plate and keep it aside.
  3. Then add 3 tbsp oil to a pan. Add cumin seeds, cinnamon stick, black cardamom and bay leaves, roast it.
  4. Now add crushed ginger and garlic and mix well.
  5. Add chopped green chilli, onion to it and sauté it.
  6. Cook for 4-5 minutes on medium flame until onions soften.
  7. After that add tomatoes and cook for 2-3 minutes on medium flame.
  8. Add turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder and salt, mix it well.
  9. Cover it and cook for 3-4 minutes on low flame.
  10. Remove the lid and cook it for 1 more minute. Keep stirring.
  11. Now add fried potato and eggplants and mix it well.
  12. Cover it and cook for 15 minutes on a low flame. Keep stirring in between.
  13. Remove the lid and mix it well.
  14. Add ¼ cup water for gravy, cover and cook for 2-3 minutes on low flame.
  15. Turn off the flame and transfer this dish to a serving bowl.

  1. In a large pan, add chopped bacon and saute until crisp and golden brown.
  2. Now transfer it into an absorbent paper-lined plate. Remove excess oil from the pan and only keep 3 tbsp of bacon grease in the pan.
  3. Then add chopped onion, celery, and carrot and cook them on medium to high flame. Stir occasionally for 7-8 minutes until soft and golden.
  4. Now sprinkle flour and saute for 1 minute. Stir constantly.
  5. After that, 2 cups of chicken broth, chopped clams along with their juice, bay leaf, Worcestershire, tabasco sauce, dried thyme, salt, and black pepper. Bring it to a boil.
  6. Now, add chopped potatoes and stir, then add milk, whipping cream. 
  7. Let the dish boil and then reduce the heat.
  8. After that, cover it and boil for 20 minutes until the potatoes turn tender.
  9. Open the lid and then add salt and pepper as per your taste. Stir well.
  10. Now transfer this soup into a bowl and garnish it with cooked bacon and fresh cilantro.

  1. Take a large bowl, add chicken cubes, salt according to taste, red chilli powder, turmeric powder, coriander powder, asafoetida, vinegar, coriander leaves, and ginger garlic paste; mix them all properly.
  2. Now, add egg white, cornstarch and mix everything well.

For Coating 

  1. In another bowl, add cornflakes and crumb it well.
  2. Add bread crumbs to it and mix everything really well.
  3. One by one, coat the chicken cubes into the corn flakes crumb properly.

For Frying 

  1. Take a kadhai, and on a medium flame, heat oil in it.
  2. Slightly, slide the pieces one at a time to the oil.
  3. Fry chicken popcorn in small batches.
  4. On medium flame, deep fry them properly till they turn golden in colour.
  5. Garnish it with a coriander sprig and a lemon wedge.

For Dip 

  1. In a bowl, add garlic, green chilli, coriander leaves, olive oil and with the help of a blender, blend it properly.
  2. Transfer the mixture into another bowl, add mayonnaise, black pepper and mix it evenly.

  • 1 cup cold heavy cream or heavy whipping cream
  • 3 Tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract (optional)
  • 2 Tablespoons marshmallow creme

Chocolate Topping 

  • 1/2 cup heavy cream or heavy whipping
  • 113g semi-sweet chocolate, finely chopped
  • for glossy shine: 1 teaspoon light corn syrup

  1. First of all, preheat the oven to 350°F.
  2. Grease the pan so that the cake seamlessly releases.
  3. Grease the parchment paper too.
  4. Beat the egg whites and granulated sugar together using a hand mixer or a stand mixer fitted with the whisk attachment on high speed for 5 minutes or until stiff peaks form.
  5. Take another bowl and beat the egg yolks, brown sugar, and vanilla extract together until pale and creamy, for about 2 minutes.
  6. Sieve the flour, 3 Tablespoons cocoa powder, baking powder, and salt together into a large bowl.
  7. Now, mix the melted butter, coffee, and egg yolk mixture with the dry ingredients.
  8. Whisk everything together on medium speed until completely combined.
  9. Using a spatula or a wooden spoon, gently fold in the egg whites until completely mixed. Avoid over-mixing and deflating those whites.
  10. Spread the batter evenly into the prepared pan and make sure that it will be a very thin layer.
  11. Shimmy the pan on the counter to smooth out the top.
  12. Now, bake for 10 minutes or until the top of the cake gently springs back when touched with your finger.
  13. Rolling the cake:
  14. Meanwhile, the cake is being baked, and place a piece of parchment paper or a thin kitchen towel flat on the counter.
  15. Sprinkle it with a light coating of cocoa powder.
  16. Once the cake comes out of the oven, and immediately take it out onto the parchment.
  17. Peel off the parchment paper that was on the bottom of the cake as it baked.
  18. Starting with the narrow end, slowly and gently roll the cake up with the parchment/towel.
  19. Allow the cake to cool completely rolled up in the parchment/towel.
  20. Place the cake in the refrigerator for about 2-3 hours, to speed it up.
  21. Remove the cake roll from the refrigerator and allow to sit on the counter for a few minutes

Make the whipped cream:

  1. Using a hand mixer or a stand mixer fitted with a whisk attachment for about 2-3 mins, whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium to stiff peaks form.
  2. Slowly and gently unroll the cake.
  3. Spread whipped cream on top, leaving about a 1/2 inch border around the cake. Gently roll the cake back up, without the parchment/towel this time.
  4. Place on a wire rack set on a baking sheet.
  5. Make the ganache topping:
  6. Take a bowl and add chopped chocolate and corn syrup.
  7. Heat the cream in a small saucepan until it begins to gently simmer.
  8. Do not let it come to a rapid boil.
  9.  Pour over chocolate, then let it sit for 2-3 minutes to gently soften the chocolate.
  10. Slowly stir until mixed properly and chocolate has melted.
  11. Pour ganache all over cake roll.

Refrigerate for at least 30-60 minutes before slicing and serving. The cake can be covered and stored in the refrigerator for up to 3 days. Enjoy the perfect swiss roll with a hot-chocolate
