  • 2kg whole chicken, at room temperature giblets and neck removed from the cavity
  • 1/4 cup unsalted butter, melted
  • 3 tablespoons olive oil
  • 1/4 cup white wine, (OPTIONAL)

  • 4 garlic cloves, minced

Preparation

  1. Firstly, preheat the oven to 430 degrees F.
  2. Now, line a baking tray with foil or lightly grease a roasting pan.
  3. Clean the chicken, discard the neck of the chicken from inside of the cavity, and remove any excess fat and leftover feathers.
  4. Sprinkle the olive oil, melted butter, wine (optional), and the juice of half a lemon over the chicken, under the skin, and inside of the cavity.
  5. Season chicken freely on the outside and inside the cavity with salt and pepper.
  6. Put over some of the parsley.
  7. Spread the minced garlic over the chicken, and mix all ingredients together over the chicken and under the skin.
  8. Stuff the garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halves.
  9. Now, tie the legs of the chicken together with kitchen string.
  10. Put the side of the breast up into a baking tray or roasting pan.
  11. Next, start roasting it and do it for almost an hour and 15-20 minutes, basting halfway through cooking time, until juices run clear when chicken thigh is pierced with a skewer. Baste again, then broil for a further 2-3 minutes until it turns golden in colour.
  12. Finally, remove from the oven, cover with foil and allow to stand for 10 minutes before serving.

Serve hot, drizzled with pan juices and remaining lemon half cut into wedges or slices.

For Methi Theple

  1. In a strainer, add fenugreek leaves salt and wash them and keep them aside till in use.
  2. Add whole wheat flour, chilli powder, turmeric powder, salt, asafoetida, oil, and fenugreek leaves in a bowl and incorporate it well.
  3. Now add little water occasionally and knead the dough.
  4. Then add some oil and knead it again.
  5. Cover and let it set for 30 minutes.
  6. After that, take a small portion of dough and make a small ball.
  7. Now it with wheat flour and roll it with a rolling pin into a thin disc.
  8. Heat a flat pan and place this thepla disc on Tawa and roast it from both sides.
  9. While roasting, baste some oil on both sides and roast till it turns golden brown.
  10. Make theplas from the remaining dough with the same process.
  11. Meethi thepla is ready to serve.

For Pickle

  1. Add red chilli, green chilli, yellow mustard seeds, turmeric powder, asafetida, salt, lemon juice, and oil in a mixing bowl.
  2. Mix everything well and keep it on the side for further use.

For the dough 

  1. Add all the dry ingredients to a bowl and mix them properly.
  2. Now, add oil, curd, and water so that you make a very smooth dough out of it.
  3. Keep kneading it for at least 5 minutes to make sure that the dough is soft and smooth.
  4. Cover the dough with a damp cloth and leave it aside for almost an hour.

For the topping 

  1. Take a pan and heat oil in it.
  2. Now, add in all the veggies.
  3. Toss them on high heat for almost 2 mins.
  4. Season it with salt, pepper and oregano and basil, according to your taste.
  5. Toss it again and place it on a plate to let it cool.

For the Sauce 

  1. Take a pan and heat it.
  2. Now, add garlic and onions and saute them for a minute.
  3. Next, add chilli flakes, stir them and then add the tomatoes.
  4. Sprinkle salt according to taste, and some basil leaves too.
  5. Cook the tomatoes till they are mashy.
  6. Then, sprinkle some dried oregano or Italian seasoning and pepper powder.
  7. Add water as per the requirement because we need to make it saucy.
  8. Remove from the stove, and cool it down.
  9. Put it into the grinder and churn it into a fine paste.
  10. In the end, we need a thick tomato sauce, but just a bit thinner than ketchup.

For Tawa Pizza

  1. Take the dough and divide it into 2.
  2. Choose the pan according to the required size of the pizza.
  3. Sprinkle a small amount of flour on the kitchen counter, press the dough with the hands, and spread it out into a circle.
  4. It is not necessary to make the pizza perfectly round.
  5. Roll it out thin, using a rolling pin, just slightly thicker than a chapati.
  6. Using a knife, prick the dough all over.
  7. Heat the pan or tawa, and drizzle a few drops of oil.
  8. Now cook the pizza base on one side for around 2 mins, and keep the flame on medium.
  9. Add some oil to the top and turn it over and lower the heat.
  10. Apply the tomato sauce onto it and make sure to spread it to the edges.
  11. Sprinkle grated cheese on top and add all the toppings over the cheese.
  12. Now, cover the pan and cook on low heat until the cheese melts and the base is cooked correctly.
  13. Remove the pizza to a plate, and garnish with basil leaves and olive oil.
  14. Cut the pizza into 4 or 8 pieces and serve it hot.

You can garnish the pizza with more grated cheese, oregano, chilli flakes, and jalapenos also. You may have other side items like garlic bread or toast because it goes well with pizza.

  • 1 sprig curry leaves
  • 2-3 green chillies
  • ½ cup of coconut water
  • 1 tsp sugar
  • 1 tbsp coriander leaves
  • Salt to taste
  • 1 tsp asafetida

For Tam-Tam Dhokla

  • 1 tsp sesame oil
  • 2 tsp red chilli powder
  • 1 tsp sesame seeds
  • 1 tbsp lemon juice
  • Coriander leaves
  • A sprig curry leaves
  • 1/2 tbsp mustard seeds

For khaman

  • 1 cup sides of dhokla, crumb
  • 1 tsp sesame seeds
  • Nylon sev
  • 2 tbsp coriander leaves
  • 1 tbsp tadka
  • Fresh pomegranate seeds
  • 1 tsp lemon juice

For Garnish

  • 1 tbsp fresh coriander leaves, chopped

Method

Evergreen Gujarati Khaman Dhokla

  1. In a mixing bowl, add gram flour, salt to taste, sugar, lemon juice, curd, ginger paste, turmeric water, turmeric powder, water as required and whisk it well to form a smooth batter and make sure the dhokla batter has no lumps.
  2. Take another bowl, add oil and fruit salt, mix well and transfer this into the batter and mix them well.
  3. Transfer it into a greased mould.

For Steaming

  1. Take a pressure cooker and remove its whistle and add water and heat it on a medium flame for 4-5 minutes.
  2. Place a small stand inside the cooker and now place the mould over it.
  3. Cover it with the lid and cook on a medium flame for 10 minutes.
  4. After 10 minutes, open the cover and insert a toothpick to check if the dhokla is cooked or not.

Note: 1. Cook for 5 minutes more if it is not cooked properly.

For Tempering

  1. Heat oil in a pan, add mustard seeds, curry leaves, asafetida, and green chilli and let it splutter.
  2. Now add coconut water, salt, sugar and coriander leaves and, mix well.
  3. Pour the tadka on the steamed dhokla.

For Tam-Tam Dhokla

  1. In a pan, heat sesame oil, add mustard seeds and curry leaves, sesame seeds and let them chirp.
  2. Now add lemon juice, lemon juice, coriander leaves and dhokla, toss it well.

  1. In a bowl, add the crumbled sides of dhokla, sesame seeds, tadka, lemon juice, coriander leaves and mix properly.

  1. Firstly, in a mixer blender jar, add cumin seeds, coriander seeds, black pepper, ginger, garlic, roughly chopped onion and 2-3 tbsp water.
  2. Blend well until thick consistency. Remove and keep it aside till in use.
  3. Cut the inner part of the parwal and Deseed it with the help of a knife. Keep the seeds aside for further use.
  4. Now, in a pan, add oil and cumin seeds. Let it splutter for few seconds.
  5. Then, add chopped onions and saute until tender.
  6. Now, mash the seeds with hands and add them to the pan.
  7. After that, add the prepared paste and stir well.
  8. Furthermore, add turmeric powder, red chilli powder, dry mango powder, garam masala and salt. Stir well.
  9. Cook it on low flame until it releases oil.
  10. Once it is cooked, turn off the flame and let this mixture cool down completely.
  11. After a while, stuff all pieces of parwal with the prepared mixture nicely.
  12. Take a non-stick pan, heat oil in it and add stuffed parwal to it.
  13. Cover and cook on low flame for 8-10 minutes.
  14. Flip the parwal pieces in between. So, that all the sides are completely cooked.
  15. Turn off the flame and serve hot.

  3. Heat oil in a kadai, fry on medium flame until crisp and brown in colour.

  5. Next, we will prepare the salad.
  6. Add carrot, cabbage, salt, chilli vinegar, sugar in a bowl and mix everything well.
  7. Then, we will prepare the sauce; for that, heat oil in a deep pan and add ginger, onion, capsicum and toss it well.

Making Mysore Pak

    1. Now put sugar in a heavy thick bottomed Kadai.
    2. Add water to the sugar.
    3. On a medium-low flame, heat the sugar syrup.
    4. Keep stirring so that the sugar dissolves.
    5. Meanwhile, take ghee in another pan on a low flame, let it melt.
    6. The ghee should hot when we add it to the besan mixture.
    7. Let the sugar solution boil, and then add besan to it.
    8. Stir the besan briskly with a wire whisk so that it dissolves with the sugar solution.
    9. Now, add ghee in parts. First, add a ladle full of ghee. You will observe a lot of bubbles and frothing in the besan mixture.
    10. The moment you add ghee, mix it with the besan with the help of a spoon or spatula.
    11. Keep the flame medium-low or medium.
    12. Mix really well.
    13. All the ghee will be absorbed well first, and you will notice a smooth molten besan mixture. Now, with non-stop stirring, cook the besan mixture on a medium-low flame.
    14. The mixture will soon start to leave the sides of the kadhai or pan.
    15. When the mixture comes together, continue the stirring and scraping.
    16. When you start to see many small bubbles and holes in the mixture, then take off the pan of the stove.
    17. Quickly tilt the Kadai and pour the whole mixture into the pan.
    18. Level it with a spatula.
    19. Let the Mysore Pak mixture become warm or cool down.
    20. Once warm or cooled down, then just keep the mixture on a chopping board or tray or plate. Tap the sides and the bottom of the pan. The Mysore Pak block falls off easily.
    21. Slice the Mysore Pak into rectangular or square pieces however you want it to be.
    22. Store in an air-tight container. It stays good for about a week to ten days at room temperature.
